This was a routine inspection. There were no out of compliance items cited at this time. The manager and assistant manager are being recognized today with an Active Managerial Control award. They both are knowledgeable about food safety and particularly the operational food safety practices of Five Guys. Food temperatures are monitored on an every 2 hour basis. Corrective action steps for improper readings are readily available. Sanitizer strength is also measured every two hours - buckets changed when appropriate. The CFM gave a full explanation of how an employee health policy is implemented in the facility. Although many of the active managerial controls are mandated through corporate policy, both of these individuals understand the reasoning behind the policies and appear to be continually doing the right thing when it comes to food safety. This was a risk factor inspection. Active Managerial Control was observed by the regular taking of temperatures throughout the day. This is part of company policy. Information was given regarding an Employee Health Policy because corporate policy could not be located during the inspection. Recommended covers be used on hot holding food items to prevent possible physical contamination. The process for cold holding the cheese at the cook line was discussed with the person in charge. The next inspection will be in approximately six months.

This was a routine inspection. The manager was able to explain the employee health policy well. It is recommended that hot hold temperatures be monitored for 135F or greater, particularly the double- panned foods. The CFM citation was a repeat from the previous inspection. Fax or email a copy of the CFM card for all food safe certified managers in the operation within 14 days to the health department. The next inspection will be in approximately six months.

The purpose of today's visit was to conduct a risk factor assessment inspection. The CFM on duty is a substitute manager from another store in nearby county that does not require the CFM photo card. CFM on duty today agreed to obtain the CFM photo card with 30 calendar days and fax or email OR another regular CFM at this store can fax or email their CFM photo card within 5 calendar days.
