This visit was conducted to do a Risk Factor inspection. Cook temperatures and line temperatures were good for hot holding. Ensure that any PHF (e.g. cheese salad , chicken salad, in pre packaged containers)is properly set in the ice bath for effectively maintaining cold holding temperatures . Thermometer was found to be calibrated. Sanitizer was found to be at required level in sanitizing buckets and at 3 vat sink. CFM said she would also assign a manager to take temperatures of phf receive when she is not in office. Recommend that cold food temperatures be monitored.

Correction: Potentially hazardous foods (time/temperature conrol for safety food) shall be held cold at a temperature of 41°F or below. Milk was relocated to walk in freezer and cheese in the walk in refrigerator. Milk was retested and found to be at 37 F and placed in refrigerator.

Correction: Potentially hazardous foods (time/temperature control for safety food) shall be held cold at a temperature of 41°F or below unless the permit holder is using "time as public health control" as specified under 3-501.19 to limit bacteria growth. POTENTIALLY HAZARDOUS FOOD REMOVED FROM UNIT AND TRANSFERRED INTO WALK-IN COOLER.

The purpose of this visit is a routine inspection. Our fax # is # 703-385- 9568. There were no critical violations noted during today's inspection. Thank you. Quaternary ammonium tested at 200ppm in 3 compartment sink and the same sanitizer is used in the wash cloth buckets. As a recommendation and as discussed, it was observed that the employees rest room exhaust does not appear to be functioning. Proper maintenance enhances the functionality of the physical facilities.

Correction: Food temperature measuring devices that are scaled only in Fahrenheit shall be accurate to +/- 2°F in the intended range of use.
Handwashing Signage at Handwashing Facilities Required (corrected on site) Observation: Observed that sign or poster that notifies food employees to wash their hands is not provided at all handwashing sinks used by food employees.
Correction: Provide a sign or poster at all handwashing sinks used by food employees that reminds food employees to wash their hands. Provided usable sign.
