The purpose of this visit was to conduct a routine inspection. The sleeping/living areas were inspected. The baseboards around the showers need to be replaced.

    Correction: Repair the leak at the three compartment sink.

    Observation: The following food item(s) were observed cold holding at improper temperatures using a calibrated food temperature measuring device: True 1DR Upright Cooler: pre-cooked pork 57F, american cheese slices 46F, milk 43F
    Correction: Potentially hazardous foods (time/temperature control for safety food) shall be held cold at a temperature of 41°F or below unless the permit holder is using "time as public health control" as specified under 3-501.19 to limit bacteria growth. PORK DISCARDED. CHEESES AND MILK MOVED TO PROPERLY WORKING COOLER IN JUV. DETENTION CENTER KITCHEN.

Repair the handsink and provide a service report. Send service report via fax or email.
Obtain a sanitizer test kit to ensure sanitizing solution is at an appropriate level to sanitize working surfaces.
Dishmachine: Chemical sanitizer
  • Critical: Food Protection from Contamination / Package, Cover, Wrap (corrected on site)
    Observation: Unwrapped or uncovered food in the following location where the food is subject to contamination: open bag of sugar stored in the dry storage area.
    Correction: Foods shall be protected from contamination by being stored in packages, covered containers or wrappings unless being cooled. EMPLOYEE CLOSED OPEN BAG OF SUGAR.
  • Sanitizer Test Kit Required
    Observation: There is no test kit located in the facility for monitoring the concentration of the chemical sanitizing solutions.
    Correction: Obtain a QUATERNARY AMMONIA test kit.
  • Plumbing / Maintained in Good Repair
    Observation: Plumbing connections under the KITCHEN HAND SINK piping are leaking.
    Correction: A plumbing system shall be maintained in good repair.
  • Hand Drying Provision / Individual, Disposable Towels (corrected on site)
    Observation: Observed that paper towels were not provided at each handwashing sink.
    Correction: Provide paper towels at each hand sink to allow employees to properly dry their hands after handwashing. EMPLOYEE PLACED PAPER NAPKINS AT HANDSINK.

PREOPERATIONAL FINAL INSPECTION
1. Waste water drain line from wash and rinse compartments of the three-compartment sink need to be properly air-gapped.
2. Install a mop rsck.
3. Caulk the grease interceptor to floor.
4. The mechanical dish washing machine is not sanitizing at the required Final Rinse Temperature. Themp-Thermolabel was used for testing. Do not use mechanical dish washing machine until it is repaired.
*Approval for a Health Department Permit is hereby granted. This inspection report shall serve as your Permit until official permit is delivered to you. No equipment additions/changes/replacements are allowed without approval by Health Department.
