Observation: Rice and beans hot holding at improper temperatures in that said food registered at 107 degrees F and 110 degrees F respectively. Said unit was not at or above 135 degrees F to hot hold said food.
Correction: Operator rapidly reheated the food to 165°F and heated the unit to maintain at 135°F or above through the hot holding period.

Observation: All potentially hazardous food cold holding at 47 degree F in walk in refrigerator. Said unit registered at 50 degrees F. As per the operator said unit was frequently opened to store and prep food all morning.
Correction: Lower the temperature of said unit to 41 degrees F or less such that the potentially hazardous food is registered at 41 degrees F or less. Cold hold potentially hazardous food at 41°F or below to inhibit the growth of harmful bacteria.
- Warewashing Equipment, Determining Chemical Sanitizer Concentration
Observation: A sanitizer test kit is not being used to ensure the chemical sanitizing solution(s) are at the proper concentration.
Correction: Use a chemical test kit to ensure the sanitizing solution is maintained at the proper solution.
- Equipment - Food Contact Surfaces, Nonfood Contact Surfaces, and Utensils
Observation: Observed accumulations of dust and grease on ventilation hood.
Ice machine observed with accumulation of mildew and dirty.
Correction: Maintain nonfood-contact surfaces of equipment clean.
Must be cleaned and maintained cleaned.
- Hand Drying Provision
Observation: No disposable towels and soap were provided at the hand washing lavatory in the front food service area.
Correction: Hand drying devices such as individual disposable paper towels, a continuous towel system that supplies the user with a clean towel or heated air hand drying device must be provided at all hand washing lavatories to encourage proper hand washing and avoid employees to drying their hands on their clothing or other unclean materials
