his visit was made to conduct a routine food safety evaluation and to conduct a training inspection with an employee of Northern Virginia Community College who is responsible for third party operations on campus. The Person in Charge was very helpful during the visit and quick to take corrective actions. The following issues require attention: 1. Prevent bare hand contact with ready to eat foods, including ice. Ensure that a proper container for using ice is provided that protects against bare hand contact. 2. Ensure that all food contact surfaces and dishes are properly washed, rinsed and sanitized. This can only be done in the 3 compartment sink in the main kitchen. 3. Please measure the concentrations of the Sanitizer solution being used. Concentrations of Quaternary Ammonium should be between 150-400 ppm. *Repeat Observations are Subject to Civil Penalty

This is a follow-up for the refrigerator unit to store milk for the capuccino machine and smoothies. The new unit delivered and installed today. Per manufacturer instruction the unit can't be open after plugging for another 24 hours. The coffee shop can now start using the capuccino machine tomorrow. The following were corrected: 1. Paper towel holder provided. 2. All caulking done. 3. coffee maker sealed on the counter. 4. Ice for smoothies will be located under the counter in a cleanable container. This is a pre-opening inspection. The following needs corrections: 1.Provide 50 foot candle lights under the hood. 2.Hand sink is blocked at the cook line. 3. Cleaning tools stored next to the hand sink. 4. Hand sink is slow to drain. 5. Metro shelving unit in front of the cook line is tied with strings. 6. Caulking on the 3 compartment sink is deteriorating. 7. Provide 36 inches work space between the equipment's. 8. The 3 compartment sink faucet fixtures are leaking and spraying by the opening. 9. The 3 compartment sink needs 2 drain boards. 11. Missing food display guards for the pastries. 12. Floors in the cook line are damaged. 13. Frozen yogurt maker needs 4 inch legs. 14. Missing light shields at the front counter. 15. Dry storage ceilings needs smooth and cleanable tiles. 16. Several unnecessary items such as: a. Front counter prep unit ( left side) b. Meat slicer on the ware wash floor. c. Two hot holding units at the front counter. d. Soda carbonation cart at the ware wash area. 17. Continental hot holding unit temperature gauge is out of order. 18. Dining room cushion bench is damaged. 19.
