his visit was made to conduct a routine food safety evaluation and to conduct a training inspection with an employee of Northern Virginia Community College who is responsible for third party operations on campus.
The Person in Charge was very helpful during the visit and quick to take corrective actions. The following issues require attention:
1. Prevent bare hand contact with ready to eat foods, including ice. Ensure that a proper container for using ice is provided that protects against bare hand contact.
2. Ensure that all food contact surfaces and dishes are properly washed, rinsed and sanitized. This can only be done in the 3 compartment sink in the main kitchen.
3. Please measure the concentrations of the Sanitizer solution being used. Concentrations of Quaternary Ammonium should be between 150-400 ppm.
*Repeat Observations are Subject to Civil Penalty

  • Critical: No Bare Hand Contact with RTE Foods (corrected on site)
    Observation: Observed food employee handling ice in way that she is touching the ice with her bare hands while preparing an iced coffee beverage.
    Correction: Instructed food employee and Person in Charge on no bare hand contact with ready to eat foods including ice. A different ice bucket was provided that is easier to use and helps prevent bare hand contact.
  • Critical: Food-Contact Surface Sanitized before Use after Cleaning (corrected on site)
    Observation: Observed that the container used to froth milk was just washed with soap and water in the handsink.
    Correction: In conjunction with Section 4-703.11, the food-contact surfaces of equipment and utensils shall be sanitized before use and after cleaning. Take all food contact surfaces to the 3 compartment sink in the main kitchen to be washed, rinsed and sanitized.
  • Critical: Sanitizers, 21 CFR Criteria for Food Contact (corrected on site)
    Observation: Observed that the concentration of the sanitizer being used was measured above 400 ppm.
    Correction: Chemical sanitizers shall be used in accordance with the CFR. High concentrations of sanitizer in excess of the CFR requirements can be harmful because residues of the materials remain. Sanitizer solution was remade and was under 400 ppm. Concentrations of Quaternary Ammonium should be between 150-400 ppm.

1. Please ensure that the handsink at the coffee bar is supplied with paper towels for proper drying after handwashing.

    Observation: Observed that paper towels were not provided at each handwashing sink. Handtowels were not provided at the handwashing sink at the coffee bar..
    Correction: Provide paper towels at each hand sink to allow employees to properly dry their hands after handwashing. Person in Charge provided hand towels for the handsink.

    Observation: The handwashing station at the coffee station is being used for purposes other than washing hands. (Observed cleaning materials and solutions stored at and in the hand washing sink)
    Correction: A handwashing sink may not be used for purposes other than hand washing.

There are 2 new equipment's added to the coffee shop.One freezer and a display case.
  • Critical: Cold Holding of Potentially Hazardous Food at 41°F or less (corrected on site)
    Observation: The following food item(s) were measured at improper temperatures: milk at 50 and 47F
    Correction: Potentially hazardous foods (time/temperature control for safety food) shall be held cold at a temperature of 41°F or below.
  • Critical: Food-Contact Surface Sanitized before Use after Cleaning
    Observation: The food-contact surfaces of the following equipment were not observed sanitized: Milk frother cups.
    Correction: In conjunction with Section 4-703.11, the food-contact surfaces of equipment and utensils shall be sanitized before use and after cleaning.

This is a follow-up for the refrigerator unit to store milk for the capuccino machine and smoothies.
The new unit delivered and installed today. Per manufacturer instruction the unit can't be open after plugging for another 24 hours.
The coffee shop can now start using the capuccino machine tomorrow.
The following were corrected:
1. Paper towel holder provided.
2. All caulking done.
3. coffee maker sealed on the counter.
4. Ice for smoothies will be located under the counter in a cleanable container.

08/27/2013Pre-Opening
This is a pre-opening inspection. The following needs corrections:
1. Seal the unpainted woods and caulk around it.
2. Caulk the baseboards.
3. Seals the coffee maker on the counter.
4. Provide ice bin for smoothies.
NOTE:
*Do not serve specialty coffee at this time until the refrigerator is replaced, that can hold 41F or below.
*Self -service coffees will be offered temporarily using thermos with spout. Milk will be stored in carafe, self- service.
*Call the health department for a follow-up.
*Recommended the issuance of the Alexandria Health Department permit.

This is a pre-opening inspection. the following needs corrections:
1. No water supply at the hand sink.
2. provide paper towel dispenser.
3. Provide hand was signage.
4. Install all equipments.
5. Provide 4 inch legs on all counter equipment's.
6. Clean and repair the rubber mat on the floor.
7. Caulk the baseboards.
8. Provide ice bin for smoothies.
*All equipment's must be installed for final inspection.

The coffee shop is still not ready for pre-opening inspection. The owner stated that the project is on hold and might abandon it. He will notify the health department in a month time.

This is a second pre-opening follow-up. The area is not ready for operational.
1. No equipments.
2. No plumbing
3. Needs major repairs.
4. Needs major cleaning.
*The Alexandria Health Department permit is DENIED.
*Call for inspection when the shop is all completely repaired and equipment's are in and installed properly.

This is a pre-opening inspection follow-up. No corrections were made from June 17, 2013.

This is a pre-opening inspection. The following needs corrections:
1.Provide 50 foot candle lights under the hood.
2.Hand sink is blocked at the cook line.
3. Cleaning tools stored next to the hand sink.
4. Hand sink is slow to drain.
5. Metro shelving unit in front of the cook line is tied with strings.
6. Caulking on the 3 compartment sink is deteriorating.
7. Provide 36 inches work space between the equipment's.
8. The 3 compartment sink faucet fixtures are leaking and spraying by the opening.
9. The 3 compartment sink needs 2 drain boards.
11. Missing food display guards for the pastries.
12. Floors in the cook line are damaged.
13. Frozen yogurt maker needs 4 inch legs.
14. Missing light shields at the front counter.
15. Dry storage ceilings needs smooth and cleanable tiles.
16. Several unnecessary items such as:
a. Front counter prep unit ( left side)
b. Meat slicer on the ware wash floor.
c. Two hot holding units at the front counter.
d. Soda carbonation cart at the ware wash area.
17. Continental hot holding unit temperature gauge is out of order.
18. Dining room cushion bench is damaged.
19. Round hot holding wells is at 127F
*Handed the employee health policy to the manager.
*Follow-up in 2 weeks for repairs, July 1st at 2:00pm
