    Observation: Observed several food item(s)in the sandwich prep unit out of temperature: sliced ham, sliced turkey, sliced beef, sausage crumbles, cream cheese dip. (items discarded and unit temp. adjusted)
    Correction: Potentially hazardous foods (time/temperature control for safety food) shall be held cold at a temperature of 41°F or below.

    Observation: Quaternary ammonium compound sanitizing solution used was not at an acceptable concentration (less than 200 ppm quat in sani bucket) corrected
    Correction: A quaternary ammonium compound solution shall have a minimum temperature of 75°F, a concentration as specified under 7-204.11 and as indicated by the manufacturer's use directions included in the labeling, and be used only in water with 500mg/L hardness or less or in water having a hardness no greater than specified by the manufacturer's label.

    Observation: Through conversation and/or review of written policy, it was determined that the establishment's employee health policy (EHP) is not compliant with the Food Code because: manager was not aware of what to do if an employee had one of the BIG 5 illnesses (process tree and employee health poster reviewed)
    Correction: Create and implement an EHP that: 1) requires employees to report certain symptoms (vomiting, diarrhea, jaundice, sore throat with fever, or a lesion/infected wound) and illnesses (Norovirus, Hepatitis A, Salmonella Typhi, Nontyphoidal Salmonella, E. coli, or Shigella)
  • Critical: Hands and Arms / Cleaning Procedure (corrected on site)
    Observation: Food handler did not use paper towel to turn off faucet after washing hands (proper method discussed)
    Correction: -ALL food employees shall wash their hands in the following manner:
    1. remove and discard used gloves,
    2. turn on warm water at the hand sink,
    3. rinse hands/arms with warm water,
    4. lather hands/arms with soap and scrub for at least 20 seconds,
    5. rinse hands/arms with warm water, and
    6. dry hands/arms with paper towels and then turn off the water at the hand sink using the paper towel.
  • Critical: Food Protection from Contamination / Separate Raw from RTE (corrected on site)
    Observation: Raw animal food holding in a manner that may cause cross contamination of ready-to-eat food as follows: raw shell eggs over ready to eat foods (corrected)
    Correction: Food shall be protected from cross contamination by separating raw animal foods like poultry, beef, pork, seafood, and eggs during holding from ALL other foods such as cooked foods, ready-to-eat foods, washed produce, etc.

This visit was made to conduct a pre-opening inspection. All items except for the following two have been corrected:
1) Provide test kit for your sanitizer.
2) Obtain your Northern Virginia Certified Food Manager Card and fax a copy to me.
The above need to be corrected prior to opening.
*Note- yogurts and other foods in customer self-service refrigeration do not need to be labeled due to them being "under your control"
Note- Trash will be put into "trash totes" The trash area is currently gravel, but is set to be paved by the end of the month.
Recommend issuance of AHD permit.
Ok for C/O.

This visit was made to conduct a pre-opening inspection. Please correct the following items:
*1) Provide indirect connection for the prep/dump sink
2) Caulk/seal along back of 3-compartment sink around hand sink and dump sink.
3) Install baseboards where missing (in process)
4) Provide hand washing signage for all handsinks (including restrooms)
5) Provide covered trash can in women's restroom.
6) Cut pipes for 3-compartment sink so that they are above the flood rim of the floor sink.
7) Provide test kit for your sanitizer.
8) Obtain your Northern Virginia Certified Food Manager Card.
