This visit was made to conduct a routine food safety evaluation. The Person in Charge was very helpful during the visit. The following issues require attention:
1. Please ensure that all foods that are prepared on site and are kept for longer than 24 hours are date marked with a date not to exceed 7 days from date of preparation.
Note: Please monitor the temperature of the Walk in Refrigerator. Most of the time/temperature control for safety foods (TCS foods) were around 41 °F and the temperature of the unit was around 42-43°F. Person in Charge turned down the temperature for this unit. Please ensure that all TCS foods are kept at 41°F or below.

  • Utensils That are In-Use / Between-Use Storage (corrected on site)
    Observation: Observed a disposable plastic container with no handle inside the storage container for the sugar.
    Correction: During pauses in food preparation or dispensing, food utensils shall be stored in one of the following manners: 1) in the food with their handles above the top of the food and the container, 2) in food that is not potentially hazardous (time/temperature control for safe food) with their handles above the top of the food within containers or equipment that can be closed, 3) on a clean portion of the food preparation table or cooking equipment only if the in-use utensil and the food contact surface of the food preparation table or cooking equipment are cleaned and sanitized, 4) in running water of sufficient velocity to flush particulates to the drain, 5) in a clean, protected location if the utensils are used only with a food that is not potentially hazardous (time/temperature control for safe food), or 6) in a container of water if the water is maintained at a temperature of at least 135°F and the container is cleaned frequently. Person in Charge removed the container. Please use a utensil or scoop that has a handle to dispense the sugar and other dried goods.

    Observation: Improper use of wet wiping cloths for the following activity: observed a wet wiping cloth on the food prep counter.
    Correction: Cloths in use for wiping counters and other equipment surfaces shall be held between uses in a chemical sanitizer solution at a specified concentration. Person in Charge removed the wiping cloth.

    Observation: The following ready-to-eat, potentially hazardous food in the refrigeration unit is not used within 24 hours of preparation and is not properly dated for disposition within 7 days at 41°F: tomato sauce in prep unit, rice and ceviche in the sliding glass door unit and rice and tamales in the Walk in Refrigerator.
    Correction: Refrigerated, ready-to-eat, potentially hazardous foods (time/temperature control for safety food) that are prepared on site and held at 41°For below shall be clearly labeled and date marked with a "use by" not exceeding 7 total days. If the food is held for only 24 hours, no date marking is required. For example, if foods like leftover soups, chili, tuna salad, potato salad, pasta salad, etc. are prepared on "January 1" they shall be date marked with a "use by" date not exceeding "January 8". This visit was made to conduct a follow-up. Manager emailed and stated that sliding glass refri. had been repaired. Upon inspection unit was still out of temperature. Refri. was mostly empty except for a few food items which were discarded. the following must be corrected by Mon. 6/15/15:
- Repair sliding glass door refri.
** Repeat violations subject to $100 ticket.

    Observation: The following mechanical refrigeration unit is not currently operating as required to cold hold food at a temperature of 41°F or less: sliding glass refri., 3 door worktop ( manager stated no foods are to be stored in 3 door worktop furthest from WIC any longer. The 3 door worktop unit in the center may be used)
    Correction: Refrigerators shall be capable of holding foods at a temperature of 41°F or below. Repair the unit(s) immediately. Foods exposed to temperature abuse for over 2 hours shall be discarded, otherwise, the foods shall be stored in properly operating refrigerators.

This visit was made to conduct a routine inspection. The following items require attention:
1. Food employees shall properly wash their hands. Effective handwashing is one of the most preventative methods for reducing foodborne illnesses. Educate food workers to properly remove and dispose soiled/dirty gloves before washing their hands at designated hand sinks.
2. It is okay for food employees to have beverages in the kitchen as long as they are covered and consumed through a straw and stored in a manner that will prevent contamination of food and food contact surfaces.
Repeat violations are subject to civil penalties.

    Correction: Food employees may have beverages in the kitchen areas as long as they are covered and consumed through a straw and stored in a manner that will prevent contamination to food, equipment, utensils, linens, and single service items. Corrected by discarding the soda can.

    Observation: The food-contact surface of the following equipment contains cracks, chips, or pits and can not be easily cleaned: interior walls of microwave.
    Correction: Multiuse food-contact surfaces shall be: 1) smooth, 2) free of breaks, open seams, cracks, chips, inclusions, pits, and similar imperfections, 3) free of sharp integral angles, corners, and crevices, 4) finished to have smooth welds and joints, and 5) accessible for cleaning and inspection. Cleaning and inspection shall be completed by one of the following methods: (a) without being disassembled, (b). by disassembling without the use of tools, or (c) by easy disassembling with the use of handheld tools.

    Observation: Kitchen ceiling tiles (approximately 10 tiles) are not maintained in good repair. Tiles are hanging from grid system (appears they are close to caving in) directly above cookline and prep refrigerators.
    Correction: Repair the physical facilities. Poor repair and maintenance compromises the functionality of the physical facilities.

    Observation: There was no Certified Food Manager (CFM) present at the beginning of the inspection.
    Correction: It is unlawful to operate a food establishment unless it is under the immediate control of a CFM. It is highly suggested that you have more than one employee with the food manager's certification. Failure to have a certified food manager on site during ALL hours of operation including food preparation, food service, and cleaning/sanitizing of equipment/utensils will result in enforcement action.

    Observation: Through conversation and/or review of written policy, it was determined that the establishment's employee health policy (EHP) is not compliant with the Food Code because: CFM did not know how long to restrcit sick employee.

    Correction: Individuals applying pesticides in a food establishment must have a current VDACS Pesticide Applicator certification, and must apply pesticides in a manner that is consistent with the manufacturer's label.

    Observation: Through conversation and/or review of written policy, it was determined that the establishment's employee health policy (EHP) is not compliant with the Food Code because: Owner could not locate the employee health policy. Gave new form.
    Correction: Create and implement an EHP that: 1) requires employees to report certain symptoms (vomiting, diarrhea, jaundice, sore throat with fever, or a lesion/infected wound) and illnesses (Norovirus, Hepatitis A, Salmonella Typhi, E. coli, or Shigella)
  • Critical: Cold Holding of Potentially Hazardous Food at 41°F or less (corrected on site)
    Observation: The following food item(s) were measured at improper temperatures: chicken @ 46F, calamari @ 44F, sliced tomatoes @ 45F, chicken @ 47F, pork @ 45F (discarded).
    Correction: Potentially hazardous foods (time/temperature control for safety food) shall be held cold at a temperature of 41°F or below.
  • Equipment / Good Repair / Operation
    Observation: The following mechanical refrigeration unit is not currently operating as required to cold hold food at a temperature of 41°F or less. Flip top unit not working properly and numerous foods inside the unit discarded.
    Correction: Refrigerators shall be capable of holding foods at a temperature of 41°F or below. Repair the unit(s) immediately. Foods exposed to temperature abuse for over 2 hours shall be discarded, otherwise, the foods shall be stored in properly operating refrigerators.
