The dish ware machine was not sanitizing. This was a chemical machine. Facility needs to work with the company that maintains this machine to find a solution as to why there seems to be an ongoing issue with sanitizing utensils in this machine. Keep monitoring the concentration of sanitizer at the dish machine to make sure it is working correctly.

Staff needs to monitor the dishmachine more often to make sure it is sanitizing. Once it was corrected the food contact surfaces were sanitized with chlorine @ 50 + ppm. Hot food holding was good. Date labeling was good. Cold holding of foods at the prep cooler below the heat lamp where prepared meals are pass to the wait staff is not holding food temperature at or below 41 degrees. Need to monitor the foods in the cooler more closely. The critical item have been corrected. Correct all other items within 3 days.
