No critical violations. Note: Do not stack a hot sample tray onto other trays. Cool tray and then you may stack it. The following are items to be taken care of during the summer break: 1. Ceiling is in poor repair, replace dirty and broken panels with smooth faced vinyl panels. 2. Clean floor fan. 3. Remove rust on drainboard supports. 4. Insulation on dishroom pipes is not cleanable and it is in poor repair. Replace with a cleanable cover. 5. Repair broken tile on dishroom wall. 6. Thoroughly clean mop sink. 7. Clean mop sink shelves. 8. Wall behind handsink in restroom has holes. Make wall cleanable. 9. Milk crates cannot be used as permanent shelving. 10. Storeroom exhaust fan is dirty. Milk box had an air temp of 49 F during my visit. Manager only stores minimum amount during lunch. Milk was found at proper temperature because of this practice but milk refrigerator should be capable of holding milk at 41 F even with the lid open. Milk crates are still being used for permanent shelves. Ceiling is still an issue.

Note: Fly swatter and nail brush stored together. This is not a good idea. When running dishmachine keep vent fan running. Open milk box is running with an air temperature of 47 during service period. This to be monitored. You may use milk crates to temporarily store items. They are not meant for long term use. You have a time control policy that handles a few foods. Some foods found today were found slightly above 135 F. You may consider adding these to your policy. Discussed displaying cheese on line. Ice level must equal food level. Worker corrected this. Yogurt and cheese displayed on ice. The container must be self-draining. Place food with the ice in a perforated pan that can drain into another pan. This is also the way to display ice for teachers. I do not recommend teachers coming into your kitchen to serve themselves out of the ice machine without washing their hands. We discussed providing a small cooler that has a perforated grill inside with the ice and scoop made available for the teachers. Permit issued.

Summer Food Program - operating Monday-Thursday. This school serves as a commissary for 2 other schools now and 3 other schools beginning July 7. This school will also be serving up 450 to students on site beginning 7/7. "Trout Melts" are not made with Trout - do not misrepresent the food on the menu. Milk is delivered to each satellite school and is not transferred between the commissary and the satellite schools.
