    Observation: The outside trash containers lids are opened.
    Correction: Receptacles and waste handling units for refuse, recyclables, and returnables shall be kept covered inside the food establishment if the receptacles and units: (1) Contain food residue and are not in continuous use

    Observation: Two light are out under the kitchen hood.
    Correction: The light intensity shall be at least 540 lux (50 foot candles) at a surface where a food employee is working with food or working with utensils or equipment such as knives, slicers, grinders, or saws where employee safety is a factor. Lighting levels are specified so that sufficient light is available to enable employees to perform certain functions such as reading labels

A black beans dented can was found in the storage room. Mouse droppings were observed on the storage room floor. The Manager occasionally cooled and reheated taco and spaghetti sauce.

  • Time/Temperature Control for Safety Food, Cold Holding (corrected on site)
    Observation: Some small milk containers were at 44 F, the milk self serving cooling unit door was opened waiting for the children, opened less than 4 hours.
    Correction: Except during preparation, cooking, or cooling, or when time is used as the public health control as specified under section 3-501.19, and except as specified under paragraph (B) of this section, time/temperature control for safety food shall be maintained at 5ºC (41ºF) or less. Bacterial growth and/or toxin production can occur if time/temperature control for safety food remains in the temperature "Danger Zone" of 5ºC to 57ºC (41ºF to 135ºF) too long. Up to a point, the rate of growth increases with an increase in temperature within this zone. Beyond the upper limit of the optimal temperature range for a particular organism, the rate of growth decreases. Operations requiring heating or cooling of food should be performed as rapidly as possible to avoid the possibility of bacterial growth.

    Observation: The unisex bathroom vent is dusty.
    Correction: Intake and exhaust air ducts shall be cleaned and filters changed so they are not a source of contamination by dust, dirt and other materials. Both intake and exhaust ducts can be a source of contamination and must be cleaned regularly. Filters that collect particulate matter must be cleaned or changed frequently to prevent overloading of the filter.

    Observation: A food container of chicken pieces was found covered and stacked on top of another food container in the "Traulsen" one door refrigerator. The container lid was opened to release heat from the plastic container and placed onto the shelf by itself
    Correction: once cooled to 41 F the container lid shall be closed. Foods must cool from 135 F to 70 F within 2 hours and from 70 to 41 F or below within 4 hours
  • Temperature Measuring Devices, Food/Accuracy (corrected on site)
    Observation: The Fahrenheit food temperature measuring device is not accurate (found reading 44 F at room temperature).
    Correction: Food temperature measuring devices that are scaled only in Fahrenheit shall be accurate to +/- 2ºF in the intended range of use. The small margin of error specified for thermometer accuracy is due to the lack of a large safety margin in the temperature requirements themselves. The accuracy specified for a particular food temperature measuring device is applicable to its entire range of use, that is, from refrigeration through cooking temperatures if the device is intended for such use.

    Observation: Receptacles and/or waste handling units for refuse, recyclables, and/or returnables kept outside the food establishment are not kept covered with tight-fitting lids or doors (a lid and door found open).
    Correction: Receptacles and waste handling units for refuse, recyclables, and returnables shall be kept covered with tight-fitting lids or doors if kept outside the food establishment. Outside receptacles must be constructed with tight-fitting lids or covers to prevent the scattering of the garbage or refuse by birds, the breeding of flies, or then entry of rodents.
  • Refuse/Toilet Room Receptacle, Covered (repeated violation)
    Observation: There is no covered receptacle in the kitchen unisex toilet room.
    Correction: A toilet room used by females shall be provided with a covered receptacle for sanitary napkins. Garbage containers should be available wherever garbage is generated to aid in the proper disposal of refuse.
  • Controlling Pests
    Observation: Mouse droppings were observed in the kitchen manager's office.
    Correction: The presence of insects, rodents, and other pests shall be controlled to minimize their presence on the premises by eliminating harborage conditions. Insects and other pests are capable of transmitting disease to man by contaminating food and food-contact surfaces. Effective measures must be taken to control their presence in food establishments.
