The purpose of this visit was to conduct a routine inspection. NOTE: - Hand washing sign was provided to the PIC. - Employee Health decision guide for manager is provided. - Advised NOT to keep the wet towels in trash with out cover where fruit flies were observed. - Increase the frequency of cleaning.
Certified Food Manager/Certificate Process Observation: The person in charge (PIC) has a valid certificate of successful completion of a Certified Food Manager (CFM) exam but does not possess the CFM card issued by ORS Interactive, Inc.
Correction: Food managers who possess a valid certificate of passing a food safety exam shall obtain the photo identification card from ORS Interactive, Inc. A copy of the photo identification card can be faxed to the food safety section at (703) 653-9448. Failure to provide a copy of the photo identification card may result in further enforcement action. PROVIDE A CFM CARD WITHIN 7 DAYS.
Refuse Container with Cover/ Women's & Unisex Toilet Room Observation: There is no covered refuse container for the disposal of feminine napkins in the ladies room stall.
Correction: A toilet room used by females shall be provided with a covered receptacle for sanitary napkins. DISCUSSED WITH THE OPERATOR.
Hand Drying Provision / Individual, Disposable Towels (corrected on site) Observation: Observed that paper towels were not provided at handwashing sink.
Correction: Provide paper towels at each hand sink to allow employees to properly dry their hands after handwashing. PAPER TOWEL WAS PROVIDED.
Critical: Controlling Pests / Methods to Use When Pests Are Found (corrected on site) Observation: Methods are not being used to control pests. Observed fruit flies in the hand sink, 3-vat, and trash bin areas.
Correction: Insects and other pests are capable of transmitting disease to people by contaminating food and food-contact surfaces. If pests are found on the premises methods shall be used to control their presence. DISCUSSED WITH THE PIC ABOUT OPTIONS TO GET RID OF FRUIT FLIES. PROVIDE A SERVICE RECEIPT FROM PEST CONTROL COMPANY WITH IN 14 DAYS.
Maintaining Premises Free of Unnecessary Items and Unused Equipment (corrected on site) Observation: Observed that items that are unnecessary to the operation or maintenance of the establishment are being stored on the premises.
Correction: Remove unnecessary items, including equipment which is no longer in use, from the premises to allow for regular and effective cleaning and to prevent harborage conditions. DISCUSSED WITH THE OPERATOR.
Cleaning Frequency for Physical Facilities (corrected on site) (repeated violation) Observation: Observed that 3-vat sink area is in need of cleaning.
Correction: Clean the physical facilities at a frequency necessary to ensure the protection and safe preparation of food. DISCUSSED WITH OPERATOR.

Critical: Cold Holding of Potentially Hazardous Food at 41°F or less (corrected on site) Observation: The following food item(s) were observed cold holding at improper temperatures using a calibrated food temperature measuring device: Diced chicken 44F, Chicken wings 52F, Diced chicken strips 45F
Correction: Potentially hazardous foods (time/temperature control for safety food) shall be held cold at a temperature of 41°F or below unless the permit holder is using "time as public health control" as specified under 3-501.19 to limit bacteria growth. Chicken wings discarded, rest of food items moved to walk in cooler at 36F Manager said food items had been at pizza station for less than 4 hrs
Handwashing Sink / Accessible at All Times (corrected on site) Observation: The handwashing facility located in the food prep area was blocked, preventing access by employees for easy handwashing.
Correction: A handwashing sink shall be maintained so that it is accessible at all times for employee use . Items were removed, manager explained that facility had just received a delivery of boxes.
Plumbing / Maintained in Good Repair Observation: The faucet at the 3 vat sink is leaking.
Correction: Repair leaking faucet within 10 days, call 703-246-8485 to report compliance. A plumbing system shall be maintained in good repair.
Cleaning Frequency for Physical Facilities Observation: The floor under the 3 vat sink and the floor under the pan racks is need of cleaning.
Correction: Clean the floors to remove all accumulated dirt and grease and take necessary steps to prevent a reooccurence to ensure the protection and safe preparation of food.
