This visit was made to conduct a routine food safety evaluation. The Person in Charge was very helpful during the visit. The following issue requires attention: 1. Time/temperature control for safety foods (TCS foods), like milk, shall be held cold at a temperature of 41°F or below. Please monitor the temperature of the refrigerator and ensure that it is maintaining temperatures of 41°F or below. Try not to overstock the refrigerator so that it can maintain temperatures. Turn down the temperature of the refrigerator and check to ensure that it is maintaining temperature. Notes: - It is recommended to have additional staff become Certified Food Protection Managers. At the time only one staff has the Northern Virginia Certified Food Protection Manager's Card - An updated Employee Health Policy Poster was provided to the facility and its updates were discussed with the staff. *Repeat Observations are Subject to Civil Penalty
Critical: Cold Holding of Potentially Hazardous Food at 41°F or less (corrected on site) Observation: The following food item(s) were measured at improper temperatures: Milk was measured at 44°F in the refrigerator. Had been out recently to be provided to children.
Correction: Potentially hazardous foods (time/temperature control for safety food) shall be held cold at a temperature of 41°F or below. Please monitor the temperature of the refrigerator and ensure that it is maintaining temperatures of 41°F or below. Try not to overstock the refrigerator so that it can maintain temperatures. Temperature of refrigerator was turned down.
Sanitizer Test Kit Required Observation: There is no test kit located in the facility for monitoring the concentration of the chemical sanitizing solutions. A test kit for quaternary ammonium is available but the facility is using chlorine to sanitize.
Correction: A bleach test kit or other device that accurately measures the concentration in ppm (mg/L) of sanitizing solutions shall be provided.
Handwashing Signage at Handwashing Facilities Required (corrected on site) Observation: A handwashing sign is not provided in one of the restrooms used by the teachers.
Correction: Provide a sign or poster at all handwashing lavatories used by food employees to notifiy them to wash their hands. A handwashing poster was provided to the Person in Charge.

This visit was made to conduct a pre-opening inspection. Please correct the following items: 1) Install door closer on staff restroom. 2) Supply soap and paper towels at all hand sinks. Food is going to be catered from Jeffery's Hot water deficiency letter has been signed. Recommend issuance of AHD permit. Ok for C/O. No violation noted during this evaluation.
