Observation: Unapproved deer meat in the breakfast area kitchen freezer
Correction: Protect food from miscellaneous sources of contamination. Deer meat was removed from the kitchen area.
- Temperature - Food Temperature Measuring Devices - Provided
Observation: The Person in Charge could not produce an appropriate food temperature measuring device to verify cooking temperatures of thin foods such as meat patties or fish filets.
Correction: A temperature measuring device with a suitable small-diameter probe that is designed to measure the temperature of thin masses shall be provided and readily accessible to accurately measure the temperature in thin foods such as meat patties and fish filets.

Observation: the refrigeration unit was at 52 degrees.
Correction: Refrigeration units shall be capable of maintaining 41 degrees or cooler (unit was turned down rechecked at 11:50am)

Observation: No sanitizer in the 3 vat sink to properly sanitize the utensils and food contact surfaces. (kitchen area did not have bleach- obtained bleach from housekeeping staff).
Correction: All food contact surfaces shall be washed rinsed and sanitized with an approval sanitizer at the proper strength (50ppm - 100ppm for bleach).

Observation: Leak at the hand sink drain allowing water to run onto the floor and no hot water at eh hand sink (hot water turned off)
Correction: The plumbing system shall be maintained in good repair without leaks and hot water shall be available at all hand sinks. The hot water shall be at least 100 degrees at the hand sink.

Correction: Eliminate harborage conditions. Insects and other pests are capable of transmitting disease to man by contaminating food and food-contact surfaces.
