    Observation: Raw food of animal origin holding in a manner that may cause cross contamination of to ready-to-eat food (RTE). Beef package stored above cheese.
    Correction: Separate raw foods during storage, preparation, holding, and display from raw RTE food including other raw food such as fish for sushi or molluscan shellfish, or other raw RTE food such as vegetables, and cooked RTE food.
  • Critical: Date Marking - Ready-to-Eat - Potentially Hazardous Food - Date Marking* (corrected on site)
    Observation: The prepared ready-to-eat (RTE) food in the refrigeration unit is not properly dated for disposition.
    Correction: Mark the name and "consume by" date on the container of RTE foods at the time of preparation if the food is to be held for more than 24 hours. If the food is held at 41°F or below the food shall be served or sold within 7 calendar days. Some harmful bacteria continue to grow even at refrigeration temperatures so limiting the amount of time in storage limits the amount of growth allowed for these bacteria.

    Correction: Provide a structural separation between the smoking area and the non-smoking area of the restaurant. Consult local building official for requirements. ( Membership only is exempt from smoking regulations but when public is allowed into establishment the smoking law applies.)

    Observation: The person in charge could not provide a food temperature measuring device. ( Food thermometer.)
    Correction: Obtain at least one food temperature measuring device so employees can properly monitor the temperature of food items in the establishment.

    Observation: There is no properly working test kit provided in the facility for monitoring the concentration of the chemical sanitizing solutions.
    Correction: Obtain a ammonium test kit so that employees can accurately monitor the concentration of the sanitizing solutions and maintain them at a safe and effective level. ( Chlorine or ammonium sanitizer is approved. If ammonium is to be used a ammonium test kit will be needed.)
  • Prohibitions (corrected on site)
    Observation: Single-service or single-use items found stored in under hand sink drain.
    Correction: Discontinue storage of clean equipment and utensils in a location subject to contamination.

Wow the DAV Lounge home of the Honor Guard is a great place to eat! They in turn do more for the VA Medical Center, the Virginia Veterans Care Center and Veterans then all restaurants combined in the Roanoke Valley.
The menu is great as are the prices. If you want to support Veterans and have a great meal this is the place to go. It will be Volunteers that will serve you. I’ll take one Volunteer over five paid employees any day. They are America at its best.
They are open Tue-Fri 7:00-2:00
