    Observation: A food employee failed to wash his or her hands before engaging in food preparation, after touching bare human body parts, after handling soiled utensils and after handling trash.
    Correction: Instruct food employees to clean their hands and exposed portions of their arms immediately before engaging in food preparation including working with exposed food, clean equipment and utensils, and unwrapped single-service and single-use articles and during food preparation, as often as necessary to remove soil and contamination and to prevent cross contamination when changing task.
  • Gloves - Use Limitation (corrected on site)
    Observation: Observed an employee handling cleaned and sanitized lunch trays with the same gloves used to handle dirty dishes.
    Correction: Employees must not contact cleaned and sanitized dishes, utensils or equipment with soiled gloves. Insure employees are trained in proper glove use.
  • Warewashing - Mechanical Warewashing Equipment, Hot Water Sanitization Temperatures
    Observation: The water temperature in the manifold servicing the high temperature ware wash machine was below the minimum allowable level of 160ºF for a stationary rack single temperature machine. The thermometer read 142ºF to 150ºF.
    Correction: Insure the dish machine is reaching the minimum wash cycle temperature. Correct by 4/12/13.
