    Correction: Clean the surface at a frequency necessary to preclude accumulation of soil residues that become encrusted or attract insects and rodents.

    Observation: Observed unlabeled spray bottle of chemical by the 3-compartment sink. PIC labeled the spray bottle during the inspection.
    Correction: Working containers of toxic items are to be properly labeled with contents. Identification of these containers with the common name of the material helps prevent the dangerous misuse of the contents.

The kitchen was observed to be very clean, excellent job by all staff members!

  • Critical: Ready-to-Eat - Potentially Hazardous Food - Disposition* (corrected on site)
    Observation: According to the ""consume by"" date on the prepared ready-to-eat (RTE) foods in the refrigerator, the food should have been discarded. Observed cooked hamburgers and mashed potatoes dated on 1/26/15 and mac & cheese dated 1/27/15. Foods should have been discarded 7-8 days ago. The PIC discarded the foods during the inspection.
    Correction: Discard the food at this time and ensure all prepared RTE food is served, sold or discarded by the ""consume by"" date. Some harmful bacteria continue to grow even at refrigeration temperatures so limiting the amount of time in storage limits the amount of growth allowed for these bacteria.
  • Equipment - Cooking and Baking Equipment
    Observation: The equipment surface of the stand oven was observed soiled with accumulations of grime and debris. The bottom and door on the stand oven was observed soiled.
    Correction: Clean the surfaces of equipment to prevent accumulations that may reduce heat transfer to adequately cook food and to prevent attract of insects when not in use.

-Employee health policy observed.
-Wet stacking of plastic bowls over the 3 compartment sink observed.
-Replace the expired test strips used for bleach sanitizer in the 3 compartment sink.
-Discontinue reusing plastic butter tubs and plastic whipped toppings tub for the storage of foods.
The person in charge was very knowledgeable and cooperative throughout the inspection, thanks!

    Observation: Employees observed working in the food service area without proper hair restraints.
    Correction: Ensure all employees wear hair restraints such as hats, hair coverings or nets, beard restraints, and clothing that covers body hair, that are designed and worn to effectively keep their hair from contacting exposed food, clean equipment, utensils and linens, and unwrapped single-service and single-use articles. This section does not apply to food employees such as counter staff who only serve beverages and wrapped or packaged foods, hostesses, and wait staff if they present a minimal risk of contaminating exposed food
  • Critical: Equipment - Food Contact Surfaces, Nonfood Contact Surfaces, and Utensils* (corrected on site)
    Observation: The following equipment food-contact surfaces were observed soiled to sight and touch: can opener blade
    Correction: Clean and sanitize these surfaces for food contact.
  • Non-Food Contact Surfaces
    Observation: The nonfood contact surfaces of the stove top burners have accumulations of grime and debris.
    Correction: Clean the surface at a frequency necessary to preclude accumulation of soil residues that become encrusted or attract insects and rodents.
  • Hand Drying Provision (corrected on site)
    Observation: No disposable towels were provided at the hand washing lavatory in the kitchen or employee restroom. Provided by Person in Charge.
    Correction: Hand drying devices such as individual disposable paper towels, a continuous towel system that supplies the user with a clean towel or heated air hand drying device must be provided at all hand washing lavatories to encourage proper hand washing and avoid employees to drying their hands on their clothing or other unclean materials

Phone consultation with PIC regarding the boiled water advisory that is currently in place. Facility should refrain from drink water or using it for cooking or cleaning. PIC stated that she boiled the water that was used to prepare the hotdogs for today's lunch. PIC also stated that no cleaning of equipment or utensils had taken place. Informed PIC that water should be brought to a rolling boil for 1 minute and that boiled water should be used in the 3-compartment sink for cleaning and sanitizing all equipment and utensils. Informed PIC that boiled or bottled water should be used for cooking or drinking. These practices should continue until the boiled water advisory has been lifted. A boiled water advisory handout will be hand delivered to the facility this afternoon.

Facility is currently without water due to water main break. Facility has already prepared and served lunch. Staff was instructed by owner to clean hands with wipes and hand sanitizer. This is NOT acceptable. Ensure that temporary hand washing station is used to wash hands prior to preparing snack this afternoon. Potable water is being brought in from other permitted facility. Commercially processed bottled water also being used. Ensure that soap is used to properly wash hands. Snack is limited to non PHF items. These practices should be continued until water is restored. No extensive food prep should take place.

    Observation: Mops not hung up to air dry. Observed Several Mops being stored together in a plastic container wet.
    Correction: Wet use maintenance items such as mops must be hung in a position that allows them to air dry so they are not allowed to grow contamination which can then be spread through the establishment at the next use.
  • Critical: Toxics - Identifying Toxic Containers* (corrected on site)
    Observation: Chemical spray bottle observed without a label. Observed a Chemical spray bottle in the chemical storage area without a label. Observed PIC label bottle.
    Correction: Label spray bottles with contents or discard.
