Discussed with the PIC some tips for organizing freezers to ensure that RTE food is stored above non RTE food, and raw animal foods are shelved with highest cook temp on the bottom shelf and lowest cook temp on the top shelf. This protects food from potential contamination during storage.

Observation: Soiled single-use gloves still in use: an employee was observed to touch his/her hair or a cell phone while wearing single-use gloves, but did not change the gloves afterward.

Observation: Some ready-to-eat (RTE) items in the refrigeration units were not properly dated for disposition after opening (opened package of ham slices for sandwiches, bowl of leftover butterscotch pudding, opened carton of milk).
Correction: Mark a "consume by" date on commercially processed RTE foods at the time the original container is opened. Also, mark a "consume by" date on RTE food that is prepared in-house. If the food is held at 41°F or below the food shall be served or sold within 7 calendar days. Some harmful bacteria continue to grow even at refrigeration temperatures so limiting the amount of time in storage limits the amount of growth allowed for these bacteria. Note: if the manufacturer has put a "use by" date on the package and it is less than (earlier than) 7 days after the package is opened, use/discard by the manufacturer's date, do not keep for the full 7 days. If the manufacturer's use-by date is more than 7 days after the package is opened, use/discard the food by 7 days anyhow.
- Nonfood-Contact Surfaces - Corrosion Resistant/Nonabsorbent
Observation: The nonfood contact surface of the shelving in the 2-door Delfield reach-in is not corrosion resistant, nonabsorbent, and/or smooth. The paint or enamel on the shelves is coming off and the shelves are beginning to rust.
Correction: Nonfood contact equipment that is exposed to splash, spillage, food soiling, or requires frequent cleaning must be smooth, durable, and nonabsorbent. Please refinish the shelving surface, or replace the shelves with approved materials.
- Temperature Measuring Devices - Ambient Air and Water
Observation: The ambient (air/water) temperature measuring device (degrees F) located in the Delfield 2-door reach-in cooler is not accurate. External read-out stated temperature was -6°F, however food inside the unit had temperatures in the low 40's. The unit is a refrigerator, not a freezer. The temperature log on the door for the month of May indicated temperatures had been recorded in the upper 30's or low 40's until on/about May 11. Temperatures for the next week were recorded in the negative single digits (such as -6, found today). There was no other thermometer inside the unit to corroborate the external read-out, or to indicate the true temperature inside the unit. .
Correction: Provide an ambient-temperature measuring device for this unit that is accurate within +/- 3 degrees Fahrenheit in the intended range of use. All refrigeration and freezing units shall have such ambient-temperature measuring devices. In addition, it is highly recommended to have a second thermometer inside units with exterior temperature gauges, as a back-up in case (as appears to have happened here) the measuring device with the exterior reading might fail.
- Floor and Wall Junctures, Coved, and Enclosed or Sealed
Observation: Floor and wall juncture under the ware-washing machine is not sealed. The vinyl-type baseboard or coving is missing.
Correction: Seal floor and wall juncture.

Observation: Lockers or other suitable facilities are not provided for employees clothing and other possessions, such as purses, cell phone chargers, and so forth: an employee's jacket was observed hanging on a shelf in the dry food storage area.
Correction: Provide lockers or other suitable facilities for the orderly storage of employees' clothing and other possessions, such as by installing a coat rack on the door of the dry-storage room, and providing appropriate storage for purses, cell phone chargers, and other personal effects to avoid potential contamination of food, utensils, equipment, linens, and single-use/single-service tableware.

Observation: Chlorine sanitizing solution used was not at an acceptable concentration: exceeded 200 ppm.
Correction: Adjust the chlorine sanitizing solution to a level of at least 50 parts per million when the pH is at 10 or less and the water temperature is 100°F, or as per other regulatory parameters for pH and temperature of water.

Observation: There is no properly working test kit provided in the facility for monitoring the concentration of the chemical sanitizing solutions (quaternary ammonium) that are pre-mixed in the automatic dispenser.
Correction: Obtain a quaternary ammonium test kit so that employees can accurately monitor and verify the concentration of sanitizing solutions. This is necessary to ensure that the automatic dispenser is mixing sanitizing solution properly, and so that the staff can maintain sanitizing solutions at a safe and effective level. PIC will order a test kit from the restaurant supply company used by this facility.
