Some harmful bacteria continue to grow even at refrigeration temperatures so limiting the amount of time in storage limits the amount of growth allowed for these bacteria.

Observation: Prep refrigeration unit across from the stove was not holding food at the proper temperature.
Correction: Repair the refrigeration unit to restore a state of condition that allows for proper operation, accuracy, functioning, maintenance, and cleanability per Part IV, Article 1 and 2 of this chapter. If unable to repair the refrigeration unit, replace it with one that meets the specifications of Part IV, Article 1 and 2 of this chapter.

Observation: The nonfood contact surface of the Kolpak walk-in box shelving is not corrosion resistant, nonabsorbent, and/or smooth in that the shelves were observed rusted at the time of inspection.
Correction: Nonfood contact equipment that is exposed to splash, spillage, food soiling, or requires frequent cleaning must be smooth, durable, and nonabsorbent.

Observation: There is no properly working test kit (Quaternary ammonia QT-10) provided in the facility for monitoring the concentration of the chemical sanitizing solutions utilized in the 3-compartment sink.
Correction: Obtain a quaternary ammonia test kit so that employees can accurately monitor the concentration of the sanitizing solutions and maintain them at a safe and effective level.

Observation: Observed a hose attached to a faucet fixture in the utility sink. The hose extended below the flood rim level of the sink basin.

The minimum allowable separation distance must be at least 2x the diameter of the water supply inlet and at least 1 inch.
