Good job on corrective actions. Mr. cogan spoke the Greg Thomas(James City County). Mr. Cogan stated that James City County said he can create water vapor with stove top but not grease. Mr. Cogan will provide menu items that are using stove top.

    Observation: Eggs and raw chicken stored in such a manner that may cause cross contamination.
    Correction: Separate types of raw animal foods from each other such as beef, fish, lamb pork, and poultry during storage, preparation, holding, and display by the following: (a) Using separate equipment for each type. (b) Arranging each type of food in equipment so that cross contamination of one type with another is prevented. (c) Preparing each type of food at different times or in separate areas.

    Observation: Unapproved equipment being used in facility. Skillet, stove top.
    Correction: Contact fire marshell concerning proper equipment and ventilation. Submit VDH food plan review applicatrion for use of new equipment. Until new equipment is approved return to using microwave to fully cook bacon and egs. Do not use skillet or stove top.

    Observation: Raw foods of animal origin(bacon, eggs, and chicken wings) stored over ready-to-eat (RTE) food in the refrigeration unit.
    Correction: Separate raw foods of animal origin during storage, preparation, holding, and display from raw RTE food including foods such as fish for sushi or molluscan shellfish, or other raw RTE food such as vegetables, and cooked RTE food.
  • Critical: Date Marking - Ready-to-Eat - Potentially Hazardous Food - Date Marking* (corrected on site)
    Observation: The ready-to-eat (RTE) commercially processed deli meats in the refrigeration unit was not properly dated for disposition after opening.
    Correction: Mark a "consume by" date on commercially processed RTE foods at the time the original container is opened. If the food is held at 41°F or below the food shall be served or sold within 7 calendar days. Some harmful bacteria continue to grow even at refrigeration temperatures so limiting the amount of time in storage limits the amount of growth allowed for these bacteria.
