2. Observed a limited amount of food items during the inspection. PIC stated more food items will be purchased today.

  • Critical: Time as a Public Health Control* (corrected on site)
    Observation: Waffle batter for which time rather than temperature is being used as a control was not labeled or otherwise marked with a 4 hour serve or discard by time. Discussed labeling requirements with the person in charge.
    Correction: Discard food that is not cooked and served or served if ready-to-eat within 4 hours from the point in time when the food is removed from temperature control. Clearly label or otherwise mark the food with a 4-hour cook-serve or serve by time.
  • Food - Food Labels (repeated violation)
    Observation: Consumer self-dispensing bulk food bin containing cereal is not properly labeled. Observed the nutritional labels provided did not match the cereals offered.
    Correction: Bulk food that is available for consumer self-dispensing shall be prominently labeled with the following information in plain view of the consumer: 1. the manufacturer's or processor's label that was provided with the food or, 2. a card, sign, or other method of notification that includes the information specified in this section.
  • Critical: Equipment - Food Contact Surfaces, Nonfood Contact Surfaces, and Utensils* (corrected on site)
    Observation: The following equipment food-contact surfaces were observed soiled to sight and touch: 1. milk pitcher 2. waffle batter pitcher 3. mixing spoon. All items were placed in the 3-compartment sink.
    Correction: Clean and sanitize these surfaces for food contact.
  • Equipment - Cooking and Baking Equipment
    Observation: The cavity of the microwave oven is observed soiled.
    Correction: Using the manufacturer's recommended cleaning procedure, clean the microwave oven at least every 24 hours.
  • Kitchenware and Tableware (corrected on site)
    Observation: Single-service or single-use articles not handled, displayed, or dispensed so that the food- or lip-contact surfaces are protected from contamination. Observed the food-contact portion of the forks to be unprotected. PIC discarded the forks and inverted all utensils.
    Correction: Handle, display, or dispense single-service and single-use articles so the food- or lip-contact surface are protected from contamination.
  • Light Bulbs Protective Shielding
    Observation: Light bulb in the breakfast area is not shielded, coated, or otherwise shatter-resistant.
    Correction: Shield or replace light bulb with a coated or shatter-resistant bulb.

- Small display reach-in cooler was adjusted to lower the temperature of the unit.
- Per PIC, time will no longer be used for the milk in the breakfast area
Facility serves a limited breakfast from 6:00am-9:00am. Facility is clean. Thank you.

PIC stated that a small display cooler will be placed on the counter to store the milk and will no longer use time as the control.
    Correction: Discard food that is not cooked and served or served if ready-to-eat within 4 hours from the point in time when the food is removed from temperature control. Clearly label or otherwise mark the food with a 4-hour cook-serve or serve by time.
  • Food - Food Labels
    Observation: Consumer self-dispensing bulk food bin containing dry cereal on the counter in the breakfast area is not properly labeled.
    Correction: Bulk food that is available for consumer self-dispensing shall be prominently labeled with the following information in plain view of the consumer: 1. the manufacturer's or processor's label that was provided with the food or, 2. a card, sign, or other method of notification that includes the information specified in this section.
  • Sanitizing Solutions, Testing Devices
    Observation: There is no properly working test kit provided in the facility for monitoring the concentration of the chemical sanitizing solutions.
    Correction: Obtain a multi-quat quaternary ammonium sanitizer test kit so that employees can accurately monitor the concentration of the sanitizing solutions and maintain them at a safe and effective level.
  • Handwashing Cleanser - Availability (corrected on site)
    Observation: Soap was not provided at the hand washing lavatory in the kitchen area. PIC provided soap at the handsink.
    Correction: Hand soap must be provided at all hand washing lavatories to encourage proper hand washing. Hand cleanser must always be present to aid in reducing microorganisms and particulate matter found on hands.
  • Mops - Drying Mops
    Observation: Mops not hung up to air dry.
    Correction: Wet use maintenance items such as mops must be hung in a position that allows them to air dry so they are not allowed to grow contamination which can then be spread through the establishment at the next use.

Change of ownership inspection. Facility is in substantial compliance with the Commonwealth of Virginia Board of Health Food Regulations. Permit issued.
Menu consists of cereal, Belgium waffles, pastries, coffee, juice, fresh whole fruit.
Breakfast service is from 6:00 am - 9:00 am. Waffle batter and remaining milk are discarded daily at the end of service.

    Observation: No disposable towels were provided at the hand washing lavatory in the in the prep area.
    Correction: Hand drying devices such as individual disposable paper towels, a continuous towel system that supplies the user with a clean towel or heated air hand drying device must be provided at all hand washing lavatories to encourage proper hand washing and avoid employees to drying their hands on their clothing or other unclean materials
