The purpose of this visit was to conduct another follow-up on the 3dr preptop cooler salad/pasta. Air temperature was at 42F and pool of water was observed inside the cooler. EHS highly recommends to replace the unit since it is not able to function properly. This unit has not been capable of holding potentially hazardous food items for the past 3 inspections. Please remove and clean the pool of water inside the unit and do not store any potentially hazardous foods inside until cooler issue is resolved. Please continue to use time as public health control for the items that are served on the salad line until cooler is replaced and/or repaired. Please contact EHS to update on the cooler. The purpose of this visit was to conduct a follow-up on the 3dr preptop cooler salad/pasta. It is still not in good repair and not capable of holding at 41F and below. EHS will follow-up in the morning of 12/10. Potentially hazardous food items served at the salad bar are on time as public health control and the rest will be stored in the walkin cooler.

Observation: The person in charge (PIC) has a valid certificate of successful completion of a Certified Food Manager (CFM) exam but does not possess the CFM card issued by ORS Interactive, Inc.
Correction: Food managers who possess a valid certificate of passing a food safety exam shall obtain the photo identification card from ORS Interactive, Inc. (see handout provided). A copy of the photo identification card can be faxed to the food safety section at (703) 653-9448. Failure to provide a copy of the photo identification card may result in further enforcement action.

The purpose of this visit was to conduct a follow-up on the McCall 3dr preptop cooler pizza and 3dr preptop cooler salad bar. Facility is currently of process of repairs. Pizza cooler was repaired and had air temperature at 41F and below and food was able to be at 41F. CFM on duty decided to keep pizza ingredients in the walkin cooler to ensure the safety of food. Please continue to refrain from using the 3dr preptop cooler salad bar cooler until it is repaired. Another follow-up will be conducted either on December 8th or 9th.

Correction: Potentially hazardous foods (time/temperature conrol for safety food) shall be held cold at a temperature of 41°F or below. All potentially hazardous food items were stored back in walkin cooler and toppings on top were placed on time as public health control

Correction: Potentially hazardous foods (time/temperature control for safety food) shall be held cold at a temperature of 41°F or below unless the permit holder is using "time as public health control" as specified under 3-501.19 to limit bacteria growth. All items were changed out and all potentially hazardous items stored at the coolers will be put on time as public health control
