The facility is clean and well organized. Temperature controls are in place throughout the food flow. Food safety protocols and employee health policies are posted in the facility.
  • Handwashing Signage/Handwashing Facilities (corrected on site) (repeated violation)
    Observation: A sign or poster that notifies food employees to wash their hands is not provided at all lavatories used by food employees
    Correction: The health department provided a sign that notifies food employees to wash their hands at all handwashing lavatories used by food employees. The manager posted the signs during the inspection.

Discussed cleaning the ventilation hood system as needed (per normal cleaning cycle). Discussed: 1) employee health policy, 2) long term corrective actions for above noted risk factors, 3) proper food storage order (hand out provided) / proper thawing and 4) proper use of time as the public health control for displaying pizzas.
  • Critical: Equipment - Food Contact Surfaces, Nonfood Contact Surfaces, and Utensils* (corrected on site)
    Observation: The following equipment food-contact surfaces were observed soiled to sight and touch: kitchen meat slicer.
    Correction: Clean and sanitize these surfaces for food contact. Train staff to wash, rinse and sanitize after each use. Discussed w/ owner. Corrective action was taken.
  • Sewage - Other Liquid Wastes and Rainwater
    Observation: Floor drain in the dish washing area was observed draining very slowly. Verify floor drain in this area is working properly and free from any obstructions.
    Correction: As discussed, verify dish washing area floor drain is working as originally designed (for change of operator).
  • Handwashing Signage/Handwashing Facilities (corrected on site)
    Observation: The sign that notifies food employees to wash their hands is not clearly visible.
    Correction: Provide a sign/poster that is clearly visible to all employees
  • Lighting, Intensity (corrected on site)
    Observation: Less than 10 foot candles of light was noted in the walk-in cooler.
    Correction: Provide at least 10 foot candles at a distance of 30 inches from the floor in the walk-in refrigeration units and dry storage areas and in other areas and rooms during periods of cleaning.
  • Physical Facilities in Good Repair
    Observation: Some floor areas and some plumbing fixtures are not in good repair or sealed properly.
    Correction: Maintain physical facilities in good repair. Poor repair and maintenance compromises the functionality of the physical facilities. Repair these areas as discussed for the change of operator.
  • Critical: Toxics - Common Name/working Containers of Toxics* (corrected on site)
    Observation: Working container of spray chemical was not properly labeled.
    Correction: Working containers of toxic items are to be properly labeled with contents. Identification of these containers with the common name of the material helps prevent the dangerous misuse of the contents. Owner directed staff person to immediately label the spray container as to what type of cleaner it is.
