Discussed the following with the Person in Charge (PIC): 1) Keep top compartment of make line unit closed as often as possible to restore proper cold holding temperatures - this is applicable even during busy hours. 2) Label all food containers with the common name 3) Written employee health policy (FDA Form 1B provided in English and Chinese) 4) Clear employee restroom of unwanted materials. Follow up inspection not scheduled as PIC corrected 3 of the 4 critical violations.

    Observation: Food employees nails are not maintained so that the edges and surfaces are smooth and cleanable.
