* The purpose of today's visit was to conduct a routine inspection.
* Please contact the Fairfax County Health Department once the service is completed, and the mechanical sanitizing dish-machine is properly working. Monitor mechanical sanitizing dish-machine by utilizing chlorine sanitizing test strips.
* Certified food manager will utilize manual wash, rinse, and sanitize in 3-compartment sink until mechanical dish-machine is serviced.
* Ensure all potentially hazardous foods being re-heated in the microwave are reaching 165 degree minimum after being stirred & covered, and cooled for 2 minutes.
* Violations corrected at the time of inspection.

  • Critical: Microwave Reheat PHF(TCS) to 165°F / Methods (corrected on site)
    Observation: The following food item was not reheated for hot holding in the microwave oven to a sufficient temperature and/or time: Black Beans
    Correction: Black Beans were reheated to greater than 165 degrees at the time of inspection. All foods heated in a microwave oven for hot holding shall be reheated so that all parts of the food reach a minimum temperature of 165°F and the food is rotated or stirred, covered and allowed to stand for 2 minutes after reheating.
  • Critical: Chlorine Sanitizer Solution Concentration based on pH and Water Temp (corrected on site)
    Observation: When tested, the low temperature, chemical sanitizing warewashing machine was observed with a sanitizing rinse concentration of less than 50 ppm chlorine solution.
    Correction: Immediate discontinuation of dishmachine at time of inspection. Certified food manager set up a 3-compartment wash, rinse, sanitize to manual wash, rinse, and sanitize all food contact surfaces at the time of inspection. Mechanical chlorine sanitizing dish-machines shall provide a minimum concentration of 50 ppm total chlorine.

*Water Heater: AO Smith BTR 400A 118 which uses 390,000 BTU, recovery rate of 378.18 GPH
*Dish Machine: Stero SCT-44 chlorine sanitizer observed with correct level of chlorine.
Observed facility clean and organized.

The purpose of today’s visit was to conduct a routine inspection.
MAINTENANCE:
*Water Heater: AO Smith BTR 400A 118 which uses 390,000 BTU, recovery rate of 378.18 GPH
*Dish Machine: Stero SCT-44 chlorine sanitizer observed with correct level of chlorine.
Observed facility clean and organized. All food and equipment temperature logs maintained.
Both CFMS on duty during inspection knowledgeable. Observed great date marking.

  • Critical: Cold Holding of Potentially Hazardous Food at 41°F or less (corrected on site)
    Observation: The following food item(s) were observed cold holding at improper temperatures using a calibrated food temperature measuring device:
    1) Cooked wings in fryer area overfilled in container at 53F,
    2) Cooked rice in 2nd 2DR prep cooler on cookline overfilled in container at 51F.

    Correction: Potentially hazardous foods (time/temperature control for safety food) shall be held cold at a temperature of 41°F or below unless the permit holder is using "time as public health control" as specified under 3-501.19 to limit bacteria growth. MOVED TO WALKIN COOLER THAT MAINTAINS 41F AND BELOW TO CHILL.
  • Temp Meas Devices for Ambient Air Location
    Observation: The temperature measuring device in the following mechanically refrigerated unit was not properly located in the warmest part of the unit:
    1) 1st 2DR prep cooler,
    2) 2nd 2DR prep cooler,
    3) 3rd 2DR prep cooler (missing),
    4) Silver King 1DR cooler (missing).

    Correction: In a mechanically refrigerated unit the sensor of a temperature measuring device shall be located to measure the air temperature of a simulated product temperature in the warmest part of the refrigerator. Store the thermometer near the door of the unit.
