    Observation: @FOOD@ hot holding at improper temperatures - hamburgers on steam table.
    Correction: Rapidly reheat the food to 165°F and maintain at 135°F or above through the hot holding period. The hamburgers on the steam table were going to be reheated to 165 degrees F ( may have been dryed out from previously being re-heated and not holding proper temperature).

    Observation: The nonfood contact surface of the storage room shelving is not corroded, nonabsorbent and/or smooth - rough edges.
    Correction: Nonfood contact equipment that is exposed to splash, spillage, food soiling, or requires frequent cleaning must be smooth, durable, and nonabsorbent - corroded racks in walk-in smooth storage shelving edges and repaint where needed.
  • Refuse - Using Drain Plugs (repeated violation)
    Observation: The refuse container used to store refuse has no drain plug - 1 of the 2 dumpsters does not have a plug.
