| Pre-Opening inspection conducted in order to assess needed actions to satisfy requirements for permitting. The following must be completed prior to a permit being issued by this department: 1) Increase cold holding capacity to be sufficient for holding refrigerated or frozen foods at proper temperatures. 2) Repair flooring so that all floors in the food preparation area are smooth, easily cleanable, and non-absorbent. Coved base molding must be installed. 3) Hand soap, paper towels and signage designating the sink as useable for handwashing only must be at the handsink in the kitchen. 4) Signage stating that all employees must wash hands after using the restroom and prior to returning to work must be placed in all bathrooms to be used by employees. 5) All new equipment brought into the establishment must be smooth, easily cleanable, and nonabsorbent.
