Facility is still not maintaining accurate food temperature charts in main kitchen. Thermometer in the #2 RIR is observed damaged. Hot holding equipment is still in disrepair. Facility is using the oven as a temporary solution. Temperature logs are not maintained on infant room refrigerator. Permit renewal will be approved upon proper operation of hot holding equipment.
  • Equipment - Good Repair and Proper Adjustment (repeated violation)
    Observation: Reach in hot holding equipment was observed in a state of disrepair and damaged.
    Correction: Repair the equipment to restore a state of condition that allows for proper operation, accuracy, functioning, maintenance, and cleanability per Part IV, Article 1 and 2 of this chapter. If unable to repair the equipment, replace it with one that meets the specifications of Part IV, Article 1 and 2 of this chapter.
  • Equipment - Good Repair and Proper Adjustment
    Observation: The door gasket of the #2 Reach in Refrigerator was observed damaged in the upper corner of the left door..
    Correction: Repair or replace the equipment door gasket in accordance with the manufacturer's specifications.
  • Conformance with Approved Procedures (repeated violation)
    Observation: Temperature logs are not being maintained with food temperatures included by the establishment in the main kitchen. Temperature are not being monitored at all for the infant room refrigerator.
    Correction: Maintain accurate temperature logs.

Observed temperature charts, food handler cards, and employee health policy. Observed hot holding equipment at maximum capacity for heat levels. Unit is observed in need of repair or replacement to ensure food temperatures are maintained at >135'F. Did not observe any food products time and/or temperature abused. No other violations observed at the time of inspection. Facility is well maintained and clean.

    Observation: Chicken Nuggets hot holding at improper temperatures.
    Correction: Discard the food and ensure that potentially hazardous foods for hot holding are maintained at 135°F or above to inhibit the growth of harmful bacteria.

    Observation: Hot Holding Unit was observed in need of repair or replacement. Unable to maintain proper hot holding temperatures of >135'F for food products.
    Correction: Repair the unit to restore a state of condition that allows for proper operation, accuracy, functioning, maintenance, and cleanability per Part IV, Article 1 and 2 of this chapter. If unable to repair the unit, replace it with one that meets the specifications of Part IV, Article 1 and 2 of this chapter.

Mechanical dishwasher observed not in use due to disrepair. Observed 3 compartment sink properly set up and in use. New stove is observed installed to replace existing stove. Hood system was observed without sticker to indicate last professional cleaning. Discussed with CFM the need for routine professional cleaning every 6 months. Observed food handler cards, employee health policy, and food temperature charts. Approved for permit.
