The purpose of this visit was to conduct a routine inspection. Preparation of pasties was observed by EHS during today's visit. Certified food manager discussed cooking and preparation methods. Good glove usage was observed. Sanitizer at 50 PPM. All temperatures were observed in compliance during today's visit.
Employee health policy was reviewed and is in compliance. Manager indicated possibility of adding a new food employee. Ensure any new employee completes health policy training.

11/13/2015Routine
The purpose of today's visit is to conduct a routine inspection.
Note: The facility did not have any food in refrigerators today and were not preparing any food today, that is why cold holding is marked not applicable. The owner purchases the food as required from the store prepares and takes it straight for delivery or event. Sometimes they prepare and hold foods in the walk-in refrigerator if the event is in the morning.

  • Equipment Closure/Deflector/Overlap Opening/Sloped
    Observation: Food-contact areas in the walk-in refrigerator are exposed to contamination since the vent/fan above the food storage area is not watertight and the condensed water is dripping on shelves. The owner put a big catch bucket under the leak but it still splashes water around.
    Correction: Fix the water leak, the equipment should be designed to deflect condensation, drips, and dust from openings into the food. Do not store any food under that leak area until it is fixed.
  • Cleaning Frequency for Physical Facilities
    Observation: Observed that the faucets for the hand washing sink in the kitchen is in need of cleaning/replacement.
    Correction: Clean the physical facilities at a frequency necessary to ensure the protection and safe preparation of food.

The purpose of today's visit is to conduct a risk factor assessment inspection.
Note: The owner uses the walk-in refrigerator just to hold foods during preparation. They do not use the refrigerator for holding any leftovers and any ingredients. All the items in the walk-in belongs to the other caterer on site.

A routine inspection was conducted during today's visit. During today's inspection, the cooking, and cooling processes of pasties were observed. Cold-holding of ingredients used was also assessed.

  • Ambient Air & Water Temp Meas Devices, F Scale, Accurate within 3°F
    Observation: The ambient air temperature measuring device located in the walk-in refrigerator is not accurate in °F. Walk-in refrigerator was reading approximately 68F. The ambient air temperature of the walk-in refrigerator was observed at approximately 41F.
    Correction: Ambient air and water temperature measuring devices that are scaled only in Fahrenheit shall be accurate to +/-3°F in the intended range of use.
  • Hand Drying Provision / Individual, Disposable Towels (corrected on site)
    Observation: Observed that paper towels were not provided at each handwashing sink.
    Correction: Provide paper towels at each hand sink to allow employees to properly dry their hands after handwashing. TOWELS WERE PROVIDED.
  • Critical: Storage of Toxics, Not Above Food, Linens, Equip., Single-Svc. (corrected on site)
    Observation: Poisonous and toxic materials are not properly stored to prevent the contamination of food, equipment, utensils, linens or single service items. Observed window cleaning chemical stored adjacent to olive oil.
    Correction: All poisonous and toxic materials shall be stored below food, equipment, utensils, linens, and single service items to prevent contamination. WINDOW CLEANING CHEMICAL WAS REMOVED AND STORED AWAY FROM FOOD.
