- Food - Miscellaneous Sources of Contamination
Observation: Open bags of sugar and flour on counter in dry-storage room.
Correction: Protect food from miscellaneous sources of contamination and prevent possible pest entry into packaging. Keep bags closed when not in use. Recommended to store the bags in a bin made of a food-safe material with a lid.
- Nonfood Contact Surfaces
Observation: The nonfood contact surface of several edges of the countertops is not designed or constructed to be easily cleanable. The rough surface of the underlying particleboard is exposed.
Correction: Seal these edges -- recommended to use the type of edging strip manufactured for this kind of countertop.
- Non-Food Contact Surfaces
Observation: The nonfood contact surface of the shelving in the refrigerators has accumulations of grime and debris. Also observed grime (food residue) on the outsides of some of the lidded bins which hold breading and other food preparation materials. Interior and exterior of microwave noted in need of cleaning.
Correction: Clean these surfaces at a frequency necessary to preclude accumulation of soil residues that become encrusted or attract insects and rodents.
- Outer Openings - Protected
Observation: Outer opening of the food establishment is not protected against entry of insects and rodents. Customer entry door was still standing open after a delivery.
Correction: Protect the food establishment against the entry of insects and rodents by keeping the entry door closed. Install a self-closing screen door if it is desired to keep the solid door open in nice weather.

- Sanitizing Solutions, Testing Devices
Observation: There is no properly working test kit provided in the facility for monitoring the concentration of the chemical sanitizing solutions. [Note: the sanitizer dispenser is calibrated by the supplier.]
Correction: Obtain a quaternary ammonium test kit and a chlorine test kit so that employees can accurately monitor the concentration of the sanitizing solutions and maintain them at a safe and effective level.
- Handwashing Signage/Handwashing Facilities (corrected on site)
Observation: A sign or poster that notifies food employees to wash their hands is not provided at all lavatories used by food employees (missing from the restroom).
Correction: Provide a sign or poster that notifies food employees to wash their hands at all handwashing lavatories used by food employees.
- Lighting, Intensity
Observation: Less than 10 foot candles of light was noted in the dry storage room
Correction: less that 50 foot candles was observed at the cooking counter.
