This visit was made to conduct a routine inspection. Please note the following items: 1) Repair screen in the back sliding door. 2) Store foods at least 6 inches off the ground.
- Food Storage / Preventing Contamination (corrected on site)
Observation: Food stored on the floor and/or food stored less than 6 inches off the floor. (boxes of food stored directly on ground).
Correction: Food shall be protected from contamination by storing the food at least 6 inches off the floor on approved shelving units or dunnage racks. Milk crates, soda crates, or bread racks are not suitable for food storage.
- Outer Openings, Protected (Screen Requirements)
Observation: An exterior door is kept open for ventilation, but the opening is not protected against the entry of insects or rodents. (Screen is ripped and has a large hole around the handle)
Correction: If an exterior door is kept open for ventilation, the opening shall be protected by a mesh screen (16 mesh to 1 inch) to prevent the entry of insects and rodents. (Repair screen door).

This visit was made to conduct a routine food safety evaluation. All food items shall be stored off the ground at least 6".
- Utensils That are In-Use / Between-Use Storage
Observation: Dispensing and/or in-use utensils improperly stored between use as follows: (Observed small bowls being used for scoops in dry ingredients.)
Correction: During pauses in food preparation or dispensing, food utensils shall be stored in one of the following manners: 1) in the food with their handles above the top of the food and the container, 2) in food that is not potentially hazardous (time/temperature control for safe food) with their handles above the top of the food within containers or equipment that can be closed, 3) on a clean portion of the food preparation table or cooking equipment only if the in-use utensil and the food contact surface of the food preparation table or cooking equipment are cleaned and sanitized, 4) in running water of sufficient velocity to flush particulates to the drain, 5) in a clean, protected location if the utensils are used only with a food that is NOT potentially hazardous (time/temperature control for safe food), or 6) in a container of water if the water is maintained at a temperature of at least 135°F and the container is cleaned frequently.

This is an update for this location. The owner applied for having a prep area in the dray storage area. Final inspection for the egress door and frame from Code Enforcement was approved today. The following needs corrections: 1. Repair the hand sink vanity. 2. Repair the 4 holes on the floor 3. - Date Marking of RTE, PHF(TCS) Prepared On-Site, Stored at 41°F or less
Observation: The following ready-to-eat, potentially hazardous food in the refrigeration unit is not used within 24 hours of preparation and is not properly dated for disposition within 7 days at 41°F: soup.
Correction: Refrigerated, ready-to-eat, potentially hazardous foods (time/temperature control for safety food) that are prepared on site and held at 41°For below shall be clearly labeled and date marked with a "USE BY" not exceeding 7 TOTAL DAYS. If the food is held for only 24 hours, no date marking is required. For example, if foods like leftover soups, chili, tuna salad, potato salad, pasta salad, etc. are prepared on 8/12/13 they shall be date marked with a "use by" date not exceeding 8/17/13.
- Critical: No Reuse of Poisonous or Toxic Material Containers for Food Storage
Observation: A container previously used to store poisonous or toxic materials is being used to store marinate. Marinate was discarded during the inspection.
Correction: Do not store food in containers previously used to store poisonous or toxic materials. This practice may result in food contamination and subsequent medical consequences to anyone consuming the contaminated food.

Provide 20 ft. candle lights in the closet near the entrance. 5. Remove all the curtains, horizontal, and vertical blinds. 6. Clean the vinyl floors at yhe extended room. *The commissary is for cold and dry storages only. *No food preparation. Tint the windows and doors.
