    Observation: Observed foods, some in containers that have been opend but unlabeled, others with labels but not from facility supplier
    Correction: some foods apparently prepared in private kitchens. Some of the foods observed have been brought in and left by family or visitors of patients. Though these foods are a very small percentage of foods in storage, they require refrigeration and handling. There is no process for safely recieving, handling, storing, and serving foods brought in by guest, employees, and others.

At time of inspection a shipment of food supplies had been received and were being stored away. All foods received are from approved sources. Discussed the acceptance of foods from guest and residents with person in charge - that foods from outside sources other than verifiable commercial providers should not be accepted into the kitchen because they come without a known approved source and do not have a handling and temperature history. Discussed kitchen cleaning frequency - a plan is established and is used for daily routine surface cleaning. Storage areas appeared orderly.

    Observation: chlorine sanitier used in dish washing machine - no test strips present for testing sanitizer concentration.
    Correction: Obtain sanitizer test strips for monitoring sanitizer level in dish washing machine.
  • Single-Service and Single-Use Articles, Use Limitation (corrected on site)
    Observation: Saving and storage of used egg shipping trays in dry goods storage area.
    Correction: Discard egg shipping trays instead of saving them.
