Observation: Outer opening of the food establishment is not protected against entry of insects and rodents. Significant gap observed between doors at back dining room entrance.
Correction: Protect the food establishment against the entry of insects and rodents by 1. Filling or closing holes and other gaps along floors, walls, and ceilings, 2. Closed, tight fitting windows, and 3. Solid, self-closing, tight-fitting doors. Insects and rodents are vectors of disease-causing microorganisms which may be transmitted to humans by contamination of food and food-contact surfaces.

Correction: Wet use maintenance items such as mops must be hung in a position that allows them to air dry so they are not allowed to grow contamination which can then be spread through the establishment at the next use.

Observation: The food on display is not protected from contamination ( shredded cheese and croutons at the front dining beverage service area were observed uncovered). The operator removed the food items to the serving line and placed under a sneeze guard.
Correction: Protect food on display by the use of packaging - counter, service line, or salad bar food guards - display cases - or other effective means to prevent contamination.

Observation: Cobwebs and debris were observed on the window stills, around and behind the Hobart hi-temp dishmachine..
Correction: All floors, walls, and ceilings must be cleaned as often as necessary to keep them clean. Cleaning of the physical facilities is an important measure in ensuring the protection and sanitary preparation of food. A regular cleaning schedule should be established and followed to maintain the facility in a clean and sanitary manner.

The person-in-charge, Mr. Robert Steele, Director of Camp Services, was available during today's inspection.

Observation: Raw foods of animal origin stored over ready-to-eat (RTE) food in the refrigeration unit ( two whole raw turkeys were observed stored above an O.J drink dispenser and on the same sheet pan with grapes, in the Hobart reach-in cooler). The operator discarded the grapes and the O.J will be discarded.
Correction: Separate raw foods of animal origin during storage, preparation, holding, and display from raw RTE food including foods such as fish for sushi or molluscan shellfish, or other raw RTE food such as vegetables, and cooked RTE food.

Observation: The mechanical warewashing machine was not operating in accordance with the manufacturer's specifications (The final rinse temperature gauge measured 90 degrees F, when operated).
Correction: Operate the warewashing machine per affixed data plate specifications to ensure that equipment and utensils are properly cleaned and sanitized.

No food preparation at the time of the inspection. Clean underneath can opener holder to help eliminate ant problem. Manager has called pest control to come service facility. Manager has called maintenance to fix the leak in the kitchen. A follow-up will be conducted on or about February 28, 2011. Ant problem should be corrected by this time.

Observation: The nonfood contact surface holder for can opener has accumulations of grime and debris which is attracting ants.
Correction: Clean the surface at a frequency necessary to preclude accumulation of soil residues that become encrusted or attract insects and rodents.

Observation: Plumbing connection under the sink next to the dish machine is leaking.
Correction: Plumbing systems and components shall be maintained in good repair.

Observation: Several ants were noted in the kitchen area around the can opener holder and table which can opener is mounted on.
Correction: Eliminate harborage conditions. Insects and other pests are capable of transmitting disease to man by contaminating food and food-contact surfaces.
