Observation: sausage gravy noted not being adequately cooled to prevent the growth of harmful bacteria.
Correction: Cool potentially hazardous foods from 135°F to 70°F within 2 hours and within a total of 6 hours from 135°F to 41°F. A longer time for cooling allows an ideal situation for bacterial growth. This has been shown to be the major contributing factor in many foodborne illnesses.
- Water - Sample Report - Nonpublic Water
Observation: The most recent water sample analysis report for the nonpublic water system is not available on file or from the person in charge.
Correction: EHS will contact the Environmental Services Section to verify sampling of the nonpublic water system. If a sample has not been taken as required annually, schedule an appointment through ESS for sample collection. The use of the nonpublic water system may continue unless the sample report cites exceedances of bacteriological or chemical standards.

No food was being prepared at time of inspection . Facility appears very clean, orderly and satisfactorily maintained. Observed that the standup Crossley freezer in the warewashing area appeared to be going down. Food items were beginning to thaw, but were still, well under cold holding requirements. The food was temping in the mid 30's and many items were still frozen. The food was removed to another unit, so that the freezer could be defrosted and repaired. Observation: A large portion of the canned goods located in the dry storage area were damaged.
Correction: Owner removed damaged products and separated them on a separate shelf. to return to supplier.

Observation: No test strips available for testing chlorine solution.
Correction: Order chlorine test strips for testing sanitizing solution and wipe down buckets.

Observation: mechanical warewashing machine is not reaching manufacture suggested temp of 120 (114) and the ppm of chlorine sanitation is in excess of 400ppm.
Correction: Continue the use of the 3 compartment sink until the warewash machine is repaired and maintain 50 - 100 ppm chlorine concentration in sanitizer bin.

Observation: A recent water sample report has not been done this year.
Correction: A water sample report is scheduled prior to the camp opening on June 17th, and the results will be mailed to this office.
- Light Bulbs Protective Shielding
Observation: Bulbs in vent hood are unshielded nor a protective coating is not provided.
Correction: Replace existing bulbs with shielded bulbs or protective globes.
