Overall excellent sanitation. Mobile unit operating at the county fair. Noted Good handwashing, good food temperatures, good no bare hand contact, sanitizer in place at 200 ppm quats and used, mixed-good employee health and one storage issue seen and corrected.
  • Critical: Food - Packaged and Unpackaged - Separation, Packaging, and Segregation* (corrected on site)
    Observation: Hamburger stored over ready to eat in the refrigerator.
    Correction: Storage corrected.

Overall excellent with clean well organized facility, good food temperatures and storage, labeling not needed, good handwashing, mixed glove use, and good employee health knowledge. Suggested division of tasks to prevent bare hand contact with two cooks working the grill area.
  • Critical: Hands - Preventing Contamination from Hands* (corrected on site)
    Observation: Bare hand contact with bread and buns when making sandwiches from the grill.
    Correction: Suggested division of tasks, or more careful attention to putting on gloves after cooking and before putting sandwiches together. Minimize bare hand and arm contact with exposed food that is not in a RTE form to reduce the potential for contamination.

Inspection done with units on and functioning correctly, good temperatures, quats and test kit in place for sanitizing, all hoses in place for water fill and wastewater discharge and in good condition. Unit in good condition and clean. No food handling seen.

Inspection of mobile unit during set up and operation at county fair. Initially problems with power hook ups. Inspection delayed until power hook up done. Good cold holding, clean well organized facility with sanitizer quats 200 ppm in place for use. Good handwashing, good glove use for prep of hamburger, good food storage to prevent cross contamination. BBQ from freezer on stove to reheat prior to placing in crock pot for hot holding, not reheated during inspection.
No violation noted during this evaluation.

All previous items corrected. Hoses for wastewater, black and gray present with holders attached under the bus, new water hose present stored in clean container inside the bus. Screens placed on windows, additional sealing done. Ample supply of utensils present, thin tipped instant read thermometer present. Access door put in place for area under sink. Permit issued.

Mobile unit, bus converted to commercial kitchen. Overall very good with some items still needed.
-Facility with small bathroom in place for worker, completely separated from kitchen. Water working with slow leak noted near water tank. Water heater in place and working. Facility with black and gray waste water tanks and plumbing - completely separate systems. Hoses to fill water and discharge wastewater not present. Find and repair leak, obtain hoses. No storage provided for wastewater hoses, owner will have brackets under unit installed. Water hose can be stored in clean container inside unit.
=Discussed how to superchlorinate water fill hose, water tanks and lines, and rinse to fill and use.
-Thermometer present, but thin tipped, fast reading thermometer needed.
-Suggest screens for windows.
-Some utensils not located. Suggest at least 2-3 of frequently used items such as tongs, spatulas for grill, and obtaining small tongs to use for items in top prep bins.
-Sanitizer (quats) and test strips present.
-Some areas require sealing, ie edge of floor, hard to reach areas.
-Area under 3 vat sink with solid cover to access pump and water heater. Suggest changing to doors that can latch closed, both for cleaning and access purposes.
-Discussed employee health policy requirements and big 5 reasons people get sick from food.
