    Observation: The nonfood contact surface of the ice machine (sides) has accumulation of mold.
    Correction: Clean the surface at a frequency necessary to preclude accumulation of soil residues that become encrusted or attract insects and rodents.

Dishwashing equipment observed to be sanitizing at proper concentration and at proper temperature. Appeared risk factors for foodborne illness being well managed.

  • Critical: Equipment and Utensils - Before Use After Cleaning* (corrected on site) (repeated violation)
    Observation: The food-contact surfaces of the following equipment were not observed sanitized: trays and utensils. Hot water sanitizing dishwashing machine is not fully sanitizing food contact surfaces. Wax tape did not melt and turn black.
    Correction: After cleaning and rinsing of the food-contact surface, the surface shall be effectively sanitized before coming in contact with food and before use. Short term-operator agreed to wash and rinse food contact surfaces in automatic dishwashing machine, then sanitize in third compartment of sink. Operator will use wax tapes to check machine daily and not use machine if it does not reach full sanitization and will submit log to Health Dept.on Friday, oct. 3, 2014.
    Long term-operatora will repair/replace booster heater to dishwashing macine to ensure it is fully sanitizing when using. Nuitrition Director from city school system agreed to submit long term corrective action plan to Health Dept. by 10/8/14.

Generally, facility observed to be clean and well ordered. Staff knowledgable about employee health policy including Norovirus cleanup protocol. Food temperature observed to be within proper range throughout food flow.

    Observation: The food-contact surfaces of the following equipment were not observed sanitized: trays for lunches--being run through the automatic dishwashing machine. The dishwashing machine is not reaching the proper temperature of 180 for the final rinse.
    Correction: After cleaning and rinsing of the food-contact surface, the surface shall be effectively sanitized before coming in contact with food and before use. Short term: Operator agreed to wash, rinse, sanitize in 3-compartment sink using quateranry ammonia sanitizer. Will also use single use trays and cups and utensils until dishwashing machine/booster heater repaired. Spoke to S. Vasquez, school foodservice coordinator about this dishwashing machine operation. She stated a work order had been placed. She will send Health Dept. a copy of the repair of dishwashing machine.

Hot water sanitizing dishwasher observed to be sanitizing adequately-wax tape melted and turned black. Food found at proper temperature throughout the flow of food.

    Observation: There is no properly working test kit provided in the facility for monitoring the concentration of the chemical sanitizing solutions.
    Correction: Obtain a quaternary ammonia sanitizer test kit so that employees can accurately monitor the concentration of the sanitizing solutions and maintain them at a safe and effective level.

    Observation: The nonfood contact surface of the dishracks are chipping and are not corrosion resistant, nonabsorbent, and/or smooth.
    Correction: Nonfood contact equipment that is exposed to splash, spillage, food soiling, or requires frequent cleaning must be smooth, durable, and nonabsorbent. Corrected by discarding.

Staff knowledgeable about employee health policy-one employee out sick with gastrointestinal illness symptoms and will be excluded for at least 2 days after symptoms subside. Good food temperatures observed throughout the flow of food. Good personal hygiene practices observed. Grease trap being cleaned out 2X/week.
