    Observation: Milk cold holding at improper temperatures during service. Milk cooler was observed fully open exposing milk to ambient air temperatures.
    Correction: Keep the milk cooler fully closed when not in use and only load cooler with 1 layer of milk. Check milk temperatures and ensure they are below 41°F at all times.

    Observation: According to the ""made on"" date on the prepared ready-to-eat (RTE) ravioli, tomato sauce and sliced cheese in the walk-in refrigerator, the food should have been discarded after 7 days.
    Correction: Discard the food at this time and ensure all prepared RTE food is served, sold or discarded 7 days after the ""made on"" date. Some harmful bacteria continue to grow even at refrigeration temperatures so limiting the amount of time in storage limits the amount of growth allowed for these bacteria.
