The purpose of today's visit was to conduct a routine assessment. Please continue the following practices as a means to incorporate Active Managerial Control:
1. Maintaining and monitoring Time as a Public Health Control records for all items served during lunch
2. Monitoring receiving temperatures for both hot holding and cold holding items received via catering

Today’s inspection was to conduct a routine inspection. Thank you for accompanying me through the inspection as your participation allows me to clarify information and identify areas where your processes may need further attention or assessment.
Catered only facility: from Fairfax Food Service Catering. This facility is open year around.
Food is delivered and served by Fairfax Food Service Catering between 10:45AM to 12:30PM
Time as Public Health Control: was implemented today for lunch. Left over foods are discarded afterwards.
**Please fax and provide a copy of food receipt temperature log taken for a week, by July 1, 2014.

  • Duties / Inspect Foods upon Receipt
    Observation: Based on a discussion with the PIC/CFM, food employees are not inspecting the food upon receipt to verify proper temperature and intact packaging.
    Correction: The Person in Charge or certified food manager shall designate employees to inspect the food upon receipt from the licensed vendors. The employees shall visibly observe the foods as they are received to determine that they are from approved sources, delivered at the required temperatures of 41°F or less, 135°F or above, or frozen solid, the temperatures of the foods are documented in a daily log book, and protected from contamination.
  • Critical: Cold Holding of Potentially Hazardous Food at 41°F or less (corrected on site)
    Observation: The following food item(s) were observed cold holding at improper temperatures using a calibrated food temperature measuring device:sliced cheddar cheese (55F) on counter.
    Correction: Potentially hazardous foods (time/temperature control for safety food) shall be held cold at a temperature of 41°F or below unless the permit holder is using "time as public health control" as specified under 3-501.19 to limit bacteria growth. Discarded. Time as Public Health Control implemented going forward.
  • Light Bulbs / Locations where Shielding is Required
    Observation: Light bulb(s) in the dry storage by serving line are not covered by a protective shielding.
    Correction: Provide light bulbs that are shielded, coated, or otherwise shatter-resistant in areas where there is exposed food, clean equipment, utensils, linens, or unwrapped single-service and single-use articles.

The purpose of this inspection was to conduct a routine inspection.
Food is catered by Fairfax Food Service and Catering. Food is delivered between 10:30-10:45 AM. Lunch is served 11:15-12:15.
True refrigerator and freezer are not used for the catered lunch.
Dish machine is not used.
Equipment/utensils are provided by caterer and picked up for cleaning/sanitizing
Hot water heater: AO Smith BTC 250A 960 250,000 BTU
  • Sanitizer Test Kit Required (corrected on site)
    Observation: There is no test kit located in the facility for monitoring the concentration of the chemical sanitizing solutions.
    Correction: Obtain a BLEACH test kit.--EHS PROVIDED SMALL SAMPLE OF TEST STRIPS.
