Reveiwed menu. Hamburger and chicken patties received raw frozen and go straight to grill. Raw shell eggs used for breakfast sandwiches only. Hamburgers are cooked well done as well as eggs scrambled. Therefore consumer advisory not necessary. Items for tuna salad and chicken salad are kept cold before making. Chicken for chicken salad is a pre cooked chopped product received frozen. Chili and hot dogs are reheated in the morning and then hot held. Chili is cooled and breakfast sausage is pre cooked, cooled and then re cooked per order. Discussed cooling methods and temperatures. PIC indicates temperatures are taken. Good use of handwashing and glove use. Good use of date marking. Items are marked when frozen and then when pulled. Reminder on Gatorade coolers used for water on course, sanitize with proper level at least once a week.
  • Hair Restraints - Effectiveness
    Observation: Employees observed working in the food service area without proper hair restraints.
    Correction: Ensure all employees wear hair restraints such as hats, hair coverings or nets, beard restraints, and clothing that covers body hair, that are designed and worn to effectively keep their hair from contacting exposed food, clean equipment, utensils and linens, and unwrapped single-service and single-use articles. This section does not apply to food employees such as counter staff who only serve beverages and wrapped or packaged foods, hostesses, and wait staff if they present a minimal risk of contaminating exposed food

Discussed date marking of food item upon opening commercial packaging and prepared food items. Discussed cooling and hot holding proper temperatures. Reminder all Employees that prepare foods must wear proper hair restraints. Personal items must be separated from facility foods and be properly labeled. Discussed reheating Hotdogs.

    Correction: PIC is to advise employees of their responsibility to report in accordance with law information concerning their health and activities as they relate to diseases transmitted through food.
  • Critical: Food - Potentially Hazardous Food - Hot Holding* (corrected on site)
    Observation: Observed hotdogs holding at improper temperatures less than 135 degrees. Hotdogs were 129 degrees. Person in charge stated hotdogs were hotholding less than 4 hrs.
    Correction: Rapidly reheat the food to 165°F and maintain at 135°F or above through the hot holding period.
  • Critical: Food - Consumption of Raw or Undercooked Animal Foods
    Observation: The raw and/or undercooked foods (hamburgers and eggs) provided on the menu, menu board, table tent or brochure do not provide a disclosure statement.
    Correction: The Consumer Advisory shall include a disclosure statement that includes a description of the animal-derived foods and identification of the animal-derived foods by astericking (*) them to a footnote that states that the items are served raw or undercooked, or contain raw or undercooked ingredients.

    Observation: Observed in-use utensils improperly stored between use
    Correction: observed a spoon used for the chili stored in a cup of room temperature water.
  • Temperature Measuring Devices
    Observation: Observed no temperature measuring device located in the GE reach in cooler or freezer. Observed broken thermometer in the True 3 door reach in cooler.
    Correction: Provide a (working and accurate) temperature measuring device in all hot or cold holding equipment used to store potentially hazardous foods so that employees can routinely monitor the ambient air temperature.
