The purpose of this visit was to conduct a routine inspection.
  • Handwashing Cleanser, Available at Handwashing Facilities (corrected on site)
    Observation: Observed that hand soap was not provided at each handwashing sink.
    Correction: Provide hand soap at each hand sink to allow employees to properly wash their hands. NOTE: Discussed with PIC.
12/31/2015Routine
The purpose of this visit was to conduct a risk factor assessment. Dishmachine activated the thermolabel. Discussed the following procedures with PIC: 1) Maintain records of inspection by licensed pest control operator. 2) Maintain copy of current license for caterer. 3) Maintain Employee Health Policy complete with signed employee illness reporting agreements for all food service workers. Documentation should be available upon request.
No violation noted during this evaluation.		06/23/2015Risk Factor
The purpose of today's visit was to conduct a routine inspection. Observed facility clean and organized. The main kitchen employee has a certificate of successful completion of a Food Handler Training Program, however no employees in the facility with confirmation of a successful completion of passing a Limited or Full Certified Food Manager. A limited or certified food manager card for one center employees needs to be obtained and copy faxed or emailed no later than the morning of Monday, December 15, 2014. EHS discussed with person in charge how to calibrate a food thermometer and to sanitize food thermometer before taking receiving temperatures. EHS provided handouts on the CFM requirements and calibrating a thermometer.
This facility caters food from Goodfood Co (2625 Wilson Blvd Arlington, VA). Food is delivered between 11AM-11:30AM and served at 12PM.
EHS observed food temperature logs being completed and retained.
  • Hair Restraint Effectiveness (corrected on site)
    Observation: Main kitchen employee observed working in the food service area without proper hair restraint.
    Correction: Food employees shall wear hair restraints such as hats, visors, hair nets or beard nets to effectively keep their hair from contacting exposed food, clean equipment, utensils, linens, and unwrapped single-service items. This section does not apply to food employees such as counter staff who ONLY serve beverages and wrapped or packaged foods, hostesses, and wait staff. LOOSE HAIR WAS PULLED BACK.
  • Food Temperature Measuring Device Required & Readily Accessible (corrected on site)
    Observation: The certified food manager could not provide a full range food temperature measuring device for verifying the receipt of cold and hot foods..-----------Observed a food thermometer ranging from 130-170F.
    Correction: A metal-stemmed probe food thermometer shall be provided and readily accessible for use in ensuring attainment and maintenance of food temperatures. A CENTER EMPLOYEE BOUGHT A FULL RANGE THERMOMETER DURING INSPECTION AT NEARBY STORE.
  • Sanitizer Test Kit Required
    Observation: There is no test kit located in the facility for monitoring the concentration of the chemical sanitizing solutions.
    Correction: Obtain a QUATERNARY AMMONIA test kit.
  • Critical: Certified Food Manager/Presence Required
    Observation: There is no limited or full Certified Food Manager present in the establishment. Observed main kitchen employee with a certificate of successful completion for a Food Handler Training Program by NRFSP.
    Correction: It shall be unlawful to operate a food establishment unless it is under the immediate control of a certified food manager. It is highly suggested that you have more than one employee with the food manager's license. ORS Interactive, Inc. (see handout provided) issues the required photo identification card with proof of successful completion of a certified food manager's exam. Failure to have a certified food manager on site during ALL hours of operation including food preparation, food service, and cleaning/sanitizing of equipment/utensils will result in closure of the establishment.
