  • Sanitizer Test Kit Required
    Observation: There is no test kit located in the facility for monitoring the concentration of the chemical sanitizing solutions for three compartment sink.
    Correction: Obtain a QUATERNARY AMMONIA test kit.
  • Nonfood-Contact Surfaces Clean at Frequency to Preclude Accumulation
    Observation: The nonfood-contact surfaces of the following equipment had accumulations of grime and debris: walls along cookline, three compartment sink, and chicken prep ara

  • Controlling Pests by Eliminating Harborage Conditions
    Observation: Observed drain flies.
    Correction: WITH MANAGER TO PREVENT HARBORAGE CONDITIONS -- SUGGESTED MANAGER TO CLEAN DRAINS AND POUR SOLUTION MIXTURE OF BLEACH AND WATER DOWN DRAINS DAILY

The purpose of this visit was to conduct a risk factor inspection. Thank you for accompanying me through the inspection.
The following topics were discussed: the importance of hand washing, pest control, and proper cold/hot holding.

  • Critical: Handwashing / When to wash hands (corrected on site)
    Observation: A food employee failed to wash his or her hands before engaging in food preparation, after handling soiled utensils, after performing procedures in one room and moving to the next, or after engaging in any activity that could contaminate the hands.
    Correction: ALL food employees shall wash their hands OFTEN especially after handling trash, using the restroom, handling raw meats, handling soiled equipment and utensils, BEFORE putting on clean gloves, etc. Proper handwashing frequencies will aid in the reduction of foodborne illness. DISCUSSED WITH CERTIFIED FOOD MANAGER.
  • Critical: Hot Holding of Potentially Hazardous Foods at 135°F or More (corrected on site)
    Observation: The following food item(s) were observed hot holding at improper temperatures using a calibrated food temperature measuring device: pulled bbq chicken (122'F) at mini steam table.
    Correction: Potentially hazardous foods (time/temperature conrol for safety food) shall be held hot at a temperature of 135°F or above unless the permit holder is using "time as the public health control" as specified under 3-501.19. ITEM WAS DISCARDED
  • Handwashing Cleanser, Available at Handwashing Facilities (corrected on site)
    Observation: Observed that hand soap was not provided at the handsink near cash register and handsink near 3 vat sink.
    Correction: Provide hand soap at each hand sink to allow employees to properly wash their hands. SOAP WAS PROVIDED.

    Correction: Email or fax verification of Certified Food Managers card to Brian.Flaherty@fairfaxcounty.gov or (703)385-9568 no later than 3-10-2014. Food managers who possess a valid certificate of passing a food safety exam shall obtain the photo identification card from ORS Interactive, Inc. (see handout provided) within 10 business days. A copy of the photo identification card can be faxed to the food safety section at (703) 385-9568. Failure to provide a copy of the photo identification card will result in further enforcement action.
