The purpose of today's visit was to conduct a risk factor assessment. Observed very good date marking. Facility was clean and organized. Please make sure all managers obtain their Certified Food Manager cards.
  • Certified Food Manager/Certificate Process
    Observation: The person in charge (PIC) has a valid certificate of successful completion of a Certified Food Manager (CFM) exam but does not possess the CFM card issued by ORS Interactive, Inc.
    Correction: Food managers who possess a valid certificate of passing a food safety exam shall obtain the photo identification card from ORS Interactive, Inc. (see handout provided). A copy of the photo identification card can be faxed to the food safety section at (703) 653-9448. Failure to provide a copy of the photo identification card may result in further enforcement action. CFM WITH CARD ARRIVED DURING INSPECTION.

  • Warewash Equipment / Cleaning Frequency
    Observation: The interior surfaces of the mechanical warewashing machine are soiled with limescale that may decrease the effectiveness of the unit.
    Correction: A warewashing machine, the compartments of sinks, basins, or other receptacles used for washing and rinsing equipment, utensils, or raw foods, or laundering wiping cloths and drainboards or other equipment used to substitute for drainboards shall be cleaned before use, throughout the day at a frequency necessary to prevent recontamination of equipment and utensils and to ensure that the equipment performs its intended function and if used at least every 24 hours.

SCOPE OF WORK:
1. INTERIOR: Renovations of existing finishes, fixtures/millwork, soffit, partitions, lights, wall graphics, rest room fixtures,and power/DATA.
2. EXTERIOR: Painting of trim and metal roof, and removal of canvas awnings.
3. New front counter.
4. New undercounter refrigerator
INSPECTION
*The above listed renovations are hereby approved by the Fairfax County Health Department. The establishment is approved for Food Service Operations.

The purpose of today's visit was to conduct a routine inspection. Facility was clean and orderly, employees were observed washing their hands as needed correctly, most temperatures were within acceptable range. Employee health policy (company policy) was present and review with manager.

    Correction: shredded cheese 38-46F. Pans were overfilled.
