PIC will call VDH as soon as the Front Line unit is repaired and operating correctly so that it can be checked.

Observation: Employee was observed drinking from an uncovered container in the food preparation area.
Correction: Employees may drink from a closed beverage container if the container is handled to prevent contamination of (1) The employee's hands, (2) The container, and (3) Exposed food, clean equipment, utensils, and linens, and unwrapped single-service and single-use articles.
- Critical: Food - Potentially Hazardous Food - Cold Holding* (corrected on site)
Observation: Sliced tomatoes and shredded cheese cold holding at improper temperatures.
Correction: PIC will use time as a Public Health Control and discard foods in 4 hours or less until unit is repaired. Cold hold potentially hazardous food at 41°F or below to inhibit the growth of harmful bacteria.
- Cooling, Heating, and Holding Capacities
Observation: Front Line Cooler was unable to cold hold foods at 41 degrees F. or less
Correction: Repair or replace Front Line Unit so that it cold holds at 41 degrees F. or less. PIC states that repair technician was scheduled to repair today. Improper food storage temperatures are a major contributing factor to foodborne illness.
- Equipment and Utensils, Air-Drying Required
Observation: Food storage containers and dishes were found stacked while wet after cleaning and chemical sanitization.
Correction: Items must be allowed to drain and air-dry before being stacked or stored to allow evaporation of chemical sanitizer and moisture that may encourage microbial growth.
