Fine tuning of the TPHC policy today- All TCS foods on 2 steam tables and 2 cold plates are always on TPHC policy Serving line logs will be used to demonstrate TPHC.. TCS foods in CresCor #1,CresCor#2 and FWE units may be on TPHC depending on menu. Temperature logs will be used to indicate when TPHC is in effect per menu item.

Evaluated and set up written TPHC policy for this school today. There is now a written TPHC procedure on 3 heated units and 2 cold plates daily for all TCS foods. TCS foods on steam table will be assessed daily to determine whether TPHC or a temperature control is to be utilized. This determination will be recorded in the serving line log book..
  • Critical: Food - Potentially Hazardous Food - Cold Holding* (repeated violation)
    Observation: Milk (41-46 F) held in a cold holding unit(47F) at improper temperatures, because lids are left open.
    Correction: Relocate food to a refrigeration unit that is capable of maintaining food storage at 41°F or below. Do not stack milks so high in the unit at the lid opening. Close lids between lunch periods. Repair other milk case so that you can alternate use of 2 units. A work order has been generated.

Correct general retail practices within 90 days. Handwashing sign on outside of restroom door should be moved to handsink location inside of restroom. TPHC policy is in effect. Add infected cuts and wounds to employee health policy. Elevate spray hose at dishmachine to ensure air gap for proper backflow protection.

    Observation: Milk refrigeration case is 37°F, however milk case is opened during service times and during that time some milks that are closest to the opening in the warmest part of the box were observed to be cold holding at improper temperatures of 43°F-45°F.
    Correction: Relocate or discard milk that is not immediatley served to a refrigeration unit that is capable of maintaining food storage at 41°F or below.
  • Refuse - Covering Receptacles
    Observation: Lid on dumpster for recyclables observed to be damaged and unable to close properly, allowing insect or rodent harborage.
    Correction: Replace or refurbish dumpster so that lid is tight-fitting.
