    Observation: Walk-in cooler and 2 door cooler are operating above 41°
    Correction: Adjust, repair, or replace to restore a state of condition that allows for proper operation, accuracy, functioning, maintenance, and cleanability per Part IV, Article 1 and 2 of this chapter.
  • Plumbing System Maintained in Good Repair
    Observation: Plumbing repair needed. (3-vat sink doesn't drain and backs up into other sinks. Ice machine leaks onto the floor. Men's urinal handle is leaking.)
    Correction: Plumbing systems and components shall be maintained in good repair.

    Observation: A direct connection exists between the drain line of the ice machine and the sewer system.
    Correction: Eliminate the direct connection between the sewer line and the cited equipment.
  • Indoor Areas - Surface Characteristics
    Observation: Observed wall damage in the following locations: under the 3-vat sink, men's room (moulding is missing), behind the shelf beside the ice machine.
    Correction: Refinish or replace the wall material at the area designated so it is: 1. smooth, durable and easily cleanable 2. nonabsorbent
  • Physical Facilities - Cleaning Frequency and Restrictions
    Observation: Cleaning is needed under all equipment and all surfaces.
    Correction: All floors, walls, and ceilings must be cleaned as often as necessary to keep them clean. Cleaning of the physical facilities is an important measure in ensuring the protection and sanitary preparation of food. A regular cleaning schedule should be established and followed to maintain the facility in a clean and sanitary manner.
