  • Light Bulbs Protective Shielding
    Observation: EHS observed light fixture over the pizza prep area next to the chest freezers did not have a globe on it and was not shielded, coated, or otherwise shatter-resistant.
    Correction: Shield or replace light bulb with a coated or shatter-resistant bulb.

  • Critical: Date Marking - Ready-to-Eat - Potentially Hazardous Food - Date Marking* (corrected on site)
    Observation: The ready-to-eat (RTE) commercially processed lunch meats and sliced cheeses in the refrigeration unit was not properly dated for disposition after opening.
    Correction: Mark a "consume by" date on commercially processed RTE foods at the time the original container is opened. If the food is held at 41°F or below the food shall be served or sold within 7 calendar days. Some harmful bacteria continue to grow even at refrigeration temperatures so limiting the amount of time in storage limits the amount of growth allowed for these bacteria.
  • Non-Food Contact Surfaces
    Observation: The nonfood contact surface of the filters over pizza oven and grill area has accumulations of grime and debris.
    Correction: Clean the surface at a frequency necessary to preclude accumulation of soil residues that become encrusted or attract insects and rodents.

Menu items made to order. Meat sauce/marinara made two times weekly. Process reviewed in detail----->prepared from fresh ingredients-date labeled-frozen-rapidly reheated to 165F as needed.
Small quantities of food purchased at a time. No food items remain on hand > one week.
Meat sauce observed properly cooling in small batches---> 84F.
Scoops with handles required.

Employee health policy reviewed and in place. Reportable illnesses also reviewed.
No date labeling observed, hoerver, PIC advised that menu items are made to order and small batches of ingredients are prepped at any given time. Fresh product sliced/used daily. No products maintained >24 hrs.
