Routine
The purpose of this visit was to conduct a Risk Factor Assessment.
Critical: Responsibility of PIC to Require Food Employees to Report GI Symptoms or Cuts, Disease, Medical Condition or Exposure to PIC (corrected on site) Observation: Observed the CFM did not have a written employee health policy (EHP) in place and had not developed a plan for the employees.
Correction: Provided the CFM with handouts and resource information on a complete EHP.
Critical: Cold Holding of Potentially Hazardous Food at 41°F or less (corrected on site) Observation: Observed milk at 43F, 43F in the True refrigerator. Multiple gallons of milk stored in the True on one shelf in the lower section of the refrigerator.
Correction: The gallons of milk were distributed in the refrigerator to allow better airflow among the product.
