- Critical: Food - Potentially Hazardous Food - Cold Holding*
Observation: Sliced tomatoes (46 degrees Fahrenheit), swiss cheese (47 degrees Fahrenheit) and other cheeses (45 degrees Fahrenheit) stored in sandwich prep unit cold holding at improper temperatures.
Correction: Cold hold potentially hazardous food at 41°F or below to inhibit the growth of harmful bacteria. PIC to store in deeper pans.

Observation: Observed accumulations of dust, dirt, food residue or other debris on the following nonfood-food contact surfaces: Overhead vents and ceiling tiles have heavy build up of dust/dirt.
Correction: Maintain nonfood-contact surfaces of equipment clean so that contamination of food is avoided.

Observation: There is no covered refuse container for the disposal of feminine napkins in the ladies room stall.

Observation: Ceiling vent above slicer is detached from the ceiling and has accumulation of dust/debris.

2. Missing light bulbs in dry storage area and in outside freezer unit.
Correction: 1. Provide at least 50 foot candles at a surface where a food employee is working with food or working with utensils or equipment such as knives, slicers, grinders, or saws where employee safety is a factor.
2. At least 10 foot candles needed in dry storage and walk-in refrigeration units. Replace missing light bulbs.

Observation: Baseboard near 3-compartment sink in need of repair. Ceiling tiles in need of repair/replacement.
Correction: Maintain physical facilities in good repair. Poor repair and maintenance compromises the functionality of the physical facilities.
