Permit displayed. Certified food manager (CFM) present. Facility organized and clean. Spoke with the CFM regarding the following: 1) Written employee health policy 2) Discard damaged food containers (corrected during inspection) 3) Facility has a power outage monitoring system. During an outage the CFM will be notified by this system. No food is stored in the refrigerator over the weekend. All potentially hazardous foods in the freezer will be discarded by the CFM in case of a power outage or an emergency.
  • Equipment - Cooking and Baking Equipment
    Observation: The cavity of the microwave oven is observed soiled.
    Correction: Using the manufacturer's recommended cleaning procedure, clean the microwave oven at least every 24 hours.
  • Critical: Sanitizer - Criteria/Chemicals for food contact* (corrected on site)
    Observation: Sanitizer concentration (>400 ppm in wiping cloth solution) being applied to food contact surfaces does not meet the requirements of 40 CFR 180.940.
    Correction: Utilize sanitizer at the proper concentration (200 ppm) that meet the requirements of 40 CFR 180.940 when applying to food contact surfaces.

    Observation: Disposable towel dispenser was out of disposable towels at hand washing sink in kitchen.
    Correction: Hand drying devices such as individual disposable paper towels, a continuous towel system that supplies the user with a clean towel or heated air hand drying device must be provided at all hand washing lavatories to encourage proper hand washing and avoid employees to drying their hands on their clothing or other unclean materials
