This was a routine inspection. No critical violations were observed. The facility as a whole was noted to be visibly cleaned. The quaternary ammonium compound sanitizer at the 3-compartment sink was observed to be within acceptable limit at, 200 ppm.
However, the certified food manager was advised to remind the custodial staff to close the dumpsters when they are not in use to prevent entry of small animals which may lead to unsanitary condition.

    Observation: Outside refuse containers were uncovered.
    Correction: Receptacles and waste handling units for refuse, recyclables, and returnables shall be kept covered with tight fitting lids or doors if kept outside the food establishment.

This was a routine inspection. Most food contact surfaces were observed to be visibly cleaned. There were no visible signs of pest presence on premises observed at the time of this visit.
The concentration of the quaternary ammonium compound sanitizer at the 3-compartment sink was checked and noted to be 200 ppm, acceptable level.

  • Food-Contact Surface in Contact with Non-PHF(TCS) Cleaned Any Time after Contamination
    Observation: Surfaces of the can opner blade were observed soiled with accumulations of grime and debris.
    Correction: Surfaces of utensils and equipment contacting food that is NOT potentially hazardous (time/temperature control for safety food) shall be cleaned at any time when contamination may have occurred.
  • Nonfood-Contact Surfaces Clean at Frequency to Preclude Accumulation (repeated violation)
    Observation: The nonfood-contact surfaces of the following equipment had accumulations of grime and debris: Convectional ovens. The top of the ovens were noted to be very dusty.
    Correction: Nonfood-contact surfaces of equipment and utensils shall be cleaned at a frequency necessary to preclude accumulation of soil residues. Clean the top of the ovens more often to prevent accumulation of dust and debris.
  • Refuse / Cover Receptacles / Outdoors / Tight-Fitting Lids
    Observation: Outside refuse container was uncovered. The dumpsters was found opened during the inspection.
    Correction: Receptacles and waste handling units for refuse, recyclables, and returnables shall be kept covered with tight fitting lids or doors if kept outside the food establishment. Keep the dumpsters closed when they are not use.

  • Critical: Hot Holding of Potentially Hazardous Food at 135°F or above (corrected on site)
    Observation: The following food item(s) were found hot holding at improper temperatures using a calibrated food temperature measuring device: cheeseburgers
    Correction: Potentially hazardous foods (time/temperature control for safety food) shall be hot held at a temperature of 135°F or above unless the permit holder is using "time as public health control" as specified under 3-501.19. All cheeseburgers were reheated at time of inspection.
