    Observation: The raw animal food on display is stored in a manner that may cause cross contamination of to ready-to-eat food (RTE).
    Correction: Separate raw animal foods during storage, preparation, holding, and display from raw RTE food including other raw animal food such as fish for sushi or molluscan shellfish, or other raw RTE food such as vegetables, and cooked RTE food.

    Observation: Soy milk 53'F, rice 49'F, cheese 50'F and peas 50'F cold holding at improper temperatures, in the refrigerator and air temperature 54'F.(voluntarily discarded TCS foods and called a refrigeration repair tech)
    Correction: Discard the food and ensure that potentially hazardous foods for cold holding are maintained at 41°F or below to inhibit the growth of harmful bacteria.

    Observation: Water shut off at the hand basin.
    Correction: Make necessary adjustments to valves and lines serving the handsink to provide water of at least 100°F to allow more effective removal of fatty soils encountered in kitchens.

    Correction: Elevate food storage onto approved shelving with minimum 6"" legs or casters.

    Observation: The ambient (air/water) temperature measuring device (degrees F) located in the glass door refrigerator is not accurate.
    Correction: Provide a temperature measuring device that is accurate within +/- 3 degrees Fahrenheit in the intended range of use.
  • Sink - Service Sink
    Observation: There is no utility sink or curbed cleaning facility designed for the cleaning of mops or similar wet floor cleaning tools and for the disposal of mop water and similar liquid wastes.

    Observation: Observed a hose attached to a faucet fixture. The hose extended below the flood rim level of the sink basin.
    Correction: Install an approved backflow prevention device or alter the length of the hose to provide the necessary separation between the water supply and the flood rim level of the sink basin. The minimum allowable separation distance must be at least 2x the diameter of the water supply inlet and at least 1 inch.

    Observation: Containers of chemcials are not properly stored to prevent the contamination of food, equipment, utensils, linens or single service items.
    Correction: Containers of chemicals must be located in an area that is not above food, equipment, utensils, linens or single service items.

    Observation: Plumbing leak below the first compartment sink of the three compartment sink.
    Correction: Maintain physical facilities in good repair. Poor repair and maintenance compromises the functionality of the physical facilities.

Operator to fix small plumbing leak below the hand sink this weekend. Monitor the refrigerator in the kitchen. Air temperature 43'F. Unit has been opened. Food temperature okay at 38'F.
  • Critical: Hands - When to Wash* (corrected on site)
    Observation: A food employee failed to wash his or her hands before putting gloves on and engaging in food preparation, after touching bare human body parts, after coughing, sneezing, eating, after handling soiled utensils or after engaging in any activity which may have contaminated his/her hands.
    Correction: Instruct food employees to clean their hands and exposed portions of their arms immediately before engaging in food preparation including working with exposed food, clean equipment and utensils, and unwrapped single-service and single-use articles and during food preparation, as often as necessary to remove soil and contamination and to prevent cross contamination when changing task.
  • Hand Drying Provision
    Observation: No disposable towels were provided a the hand washing lavatory in the kitchen.
    Correction: Hand drying devices such as individual disposable paper towels, a continuous towel system that supplies the user with a clean towel or heated air hand drying device must be provided at all hand washing lavatories to encourage proper hand washing and avoid employees to drying their hands on their clothing or other unclean materials

    Observation: Spray can of air freshener in the cabinet with utensils and is not properly stored to prevent the contamination of food, equipment, utensils, linens or single service items.

  • Refuse Outside Receptacles
    Observation: The refuse container located outside the establishment is left wide open and no drain plug on dumpster.
    Correction: Keep doors closed and covered on the outside refuse container with one that is a tight fit and a drain plug secured to unit.Keep trash inside of unit and not around dumpster.(Dick Kelly Real Estate Co.).
